Summer Shinko Season is here! This time, I absolutely loved the appetizers— Salt-grilled white fish roe (Shirako) and Hiroshima oyster simmered in soy broth (Shigure-ni) were both delightful. When it comes to nigiri, two stood out: 🔸 Sweet shrimp (Amaebi) from Hyogo Prefecture 🔸 Early-season salmon (Tokishirazu) from Hokkaido’s Kombumori I’ve always been a fan of silver-skinned fish and traditional Edomae sushi.
