Finally booked Sushi Inaba! Chef was super kind, overall experience excellent β 18 courses, and aside from the modest setting, almost nothing to criticize. π Uni Soba β reminiscent of Kaneyoshiβs oyster noodles. Uni was sweet and fresh, paired with soba for a clean, smooth bite. π Ankimo (Monkfish Liver) β soft texture, perfectly seasoned. π Blue Shrimp with Seaweed β tangy-sweet seaweed complemented the shrimp refreshingly. π£ Sushi rice was well-selected, seasoning thoughtful. My favorites: π Bluefin Tuna β rich marbling, balanced seasoning. π Charcoal-Grilled Toro β perfectly grilled to bring out the fatβs aroma β incredibly fragrant. π Uni β as sweet and fresh as ever. Just what I crave. π Kohada (Gizzard Shad) β usually the fishiest for me, but chef handled it masterfully β no fishiness, just deep savory flavor. π Tamago β one of the best Iβve had. Perfect sweetness and umami, fluffy yet springy. Overall, this is one of the best omakase experiences Iβve had in LA. Hard to book, but chef is very warm. Pacing is slow β dinner from 7 PM to 10 PM β but they only take one seating per night. No real flaws besides the simple decor.
