Louisville, here we come! 🚗💨
Louisville is the largest city in Kentucky. It took us less than two hours to drive from our hotel in Indy — so of course we couldn’t miss it! The Kentucky Derby 🐎 is held at Churchill Downs in Louisville. Louisville hosts the largest horse racing event in the U.S. — the Derby — which is why Kentucky is known as the “Horse Racing Capital.” The Derby features three-year-old thoroughbreds. The statue of the horse here honors Barbaro, the champion who won the 2006 Kentucky Derby. After breaking his leg in May 2006, Barbaro underwent a five-hour surgery at the University of Pennsylvania. But two months later, he developed laminitis. Since a horse with a broken leg can’t recover fully and would suffer, the vets made the difficult decision to euthanize him. Barbaro’s ashes are buried beneath this statue. After reading about horse leg injuries and Barbaro’s story, it’s hard not to reflect: human enjoyment of horse racing comes at the cost of these magnificent animals’ well-being. 😢🐴 Now for the must-eat spot in Louisville — Mima’s Cuban Restaurant 🌴! Highly recommended by locals, this place takes you straight back to 1950s Havana with its retro vibe and decor. We ordered their famous garlic shrimp and fried fish. I was absolutely obsessed with the fried fish — thick, tender fillets, crispy on the outside and juicy inside. Served with fresh salsa and avocado salad… Perfection!
