Mexican Food in Palm Springs, CA! Checked out Blue Coyote 🌵🌮

Blue Coyote Grill is located in downtown Palm Springs – street parking only, but it’s fairly convenient. The name itself is pretty unique – it translates to “Blue Wolf Grill,” and it’s a Mexican restaurant with deep local roots. In fact, the city of Palm Springs declared November 10th as "Don Kavanaugh Day" (the founder of Blue Coyote Grill) – that’s how iconic this place is! 🎉 🌟 Fajitas – A must-order every time I eat Mexican! This time, we got the beef fajitas. The grilled beef with onions and peppers was incredibly aromatic. Like most fajitas, it came with rice, beans, tortillas, sour cream, pico de gallo, and guacamole. Whether you eat the beef alone or wrapped in a tortilla with all the fixings, it’s absolutely satisfying! 😋 🌟 Seafood Salad – Another great choice! It features grilled mahi-mahi, scallops, and shrimp marinated and served over fresh lettuce, with grilled pineapple, tomatoes, jicama, and cotija cheese. So flavorful you don’t even need extra dressing – healthy and delicious! 🥗🦐 🌟 Tahquitz Tostada Salad – You can choose beef, shrimp, or chicken. Served in a vibrant red smoked-chili tortilla bowl, this salad is as pretty as it is tasty! It’s loaded with black beans, veggies, cheese, guacamole, pico de gallo, and sour cream – mix it all up and dig in! 🌯 🌟 Tacos – Of course, we had to try the tacos! You can choose soft or hard shells and a variety of meats. The pork tacos with soft shells were hearty and flavorful – tender pork topped with shredded lettuce and cheese, all blending together perfectly. 🌮 The beef tacos with hard shells were crunchier but a bit less healthy. The beef was on the tougher side, but the seasonings and toppings still made it enjoyable. 🌟 Trio de Brochetas – A skewer platter with chicken, shrimp, and scallops, served with rice and veggies, drizzled with chipotle aioli. The scallops were my favorite – tender and lightly salty from the sea. However, the aioli was a bit too heavy and overpowering for my taste. 🍢 Mexican food can sometimes feel similar from place to place, but Blue Coyote offers a great variety – especially if you’re dining with a group. Plus, you’ll never leave hungry!
