Michelin Dining in Aarhus|Substans

😽 Aarhus has quite a few Michelin-starred restaurants, but with only two days here, I chose this one-starred spot on the 11th floor by the sea. 🌟 😽 Fixed dinner menu: 15 courses for 1500 DKK 🔵Wine pairing: 1000 DKK / Juice pairing: 500 DKK (7 glasses) 🥂 🔵The meal started with a bowl of tangy-sweet onion soup. 🥕The snacks and appetizers were solid—seafood dishes incorporated sake and miso, and the shrimp tart was delicious. 🎉Asparagus, potatoes, and other veggies were mostly locally sourced Danish ingredients, roasted to perfection! Also, this place loves vinegar… at least 10 courses had a touch of it. Vinegar lovers would be in heaven. 🍬 The steamed fish was incredibly tender—witch flounder 🐟 with yuzu sauce and mussel broth, so refreshing! 🍬 The red meat section… felt similar to most Danish restaurants. 🌈The lamb was tender but a bit salty with a gamy note. However, one standout was a dish with potatoes topped with powdered deer heart—unique! 😽 Desserts were bold: beetroot sorbet with hazelnut cream and caviar (the beet part was delicious! ), plus rhubarb ice cream and coffee ice cream sandwiches—not just sweet but complex. 😽 Mixed feelings about the juice pairing—pricey, but well-crafted. 🌈Only 3 were actual juices, 2 were fruit-infused teas (oolong and black tea), and 1 was a sparkling drink.
