š½ Despite Denmark being a small country, š«it boasts a surprising number of Michelin-recommended restaurantsāover 70 in Copenhagen alone, and here in Aarhus, there are 12. š½ļø Domestic ā We visited for a team dinner and enjoyed three appetizers and three main courses. True to its name, the restaurant insists on using only locally sourced Danish ingredients. š« š„¬ Given Denmarkās limited agricultural variety due to its climate, the chefs preserve almost everything they can in jars and barrels, š„¬fermenting and pickling to develop deep, complex flavors. They also specialize in house-made "juice pairings"āthough these are more like crafted blends of fermented and aged concoctions, layered and intriguing. š½ The plating isnāt as meticulously refined as some Michelin spots, but the rustic presentation doesnāt lack creativity. š½ One dish looked like a tiny potted plantāturned out to be mussels! My colleagues and I debated what the "soil" was (still a mystery), but it had a velvety texture.
