True to its name, the restaurant insists on using only locally sourced Danish ingredients. 🫐 🄬 Given Denmark’s limited agricultural variety due to its climate, the chefs preserve almost everything they can in jars and barrels, 🄬fermenting and pickling to develop deep, complex flavors. They also specialize in house-made "juice pairings"—though these are more like crafted blends of fermented and aged concoctions, layered and intriguing. 😽 The plating isn’t as meticulously refined as some Michelin spots, but the rustic presentation doesn’t lack creativity. 😽 One dish looked like a tiny potted plant—turned out to be mussels! My colleagues and I debated what the "soil" was (still a mystery), but it had a velvety texture.
