πA ramen shop super close to NYU, small but super clean! π 1β£οΈ Signature Tonkotsu Ramen This is a very traditional tonkotsu ramen, topped with a soft-boiled egg and Kikurage mushrooms. The thickness and firmness of the noodles, as well as the richness of the broth, are all just right. πThe noodles are classic thin ramen, perfectly cooked with a nice bite. The soft-boiled egg is amazing, and the chashu (pork slices) are thin but flavorful. π The tonkotsu broth is super fragrant, not overly thick or greasy, which I really appreciated. I also added extra spicy sauce, which I highly recommend for those who like a bit of heat.
