I just stumbled upon a true gem while looking for a casual meal—and left completely amazed! The chef is Japanese, and you can taste the craftsmanship in every bite. No shortcuts, no artificial broths—just real, heartfelt cooking. 🧑🍳💖 Chatting with the chef, I learned this is a chain from Japan, and the Pasadena location is their first in the US, currently in soft opening! 🍖 About the Chashu: This was a revelation! I’ve never been a big chashu fan, but this one changed my mind forever. 🥓 It’s charcoal-grilled, with a beautiful smoky aroma—not just salty soy sauce flavor. The fat-to-lean ratio is perfect, crispy-edged and juicy inside, rich but not greasy. I’m already planning to order the Mega Tonkotsu Ramen next time just to have more of this incredible chashu! 🍜 The Ramen: As a ramen broth snob, I can tell this is simmered fresh daily—no instant powder here. The broth is layered, deeply savory yet not overly salty, with a sweet finish that keeps you sipping. Noodles are springy and satisfying, and the portion is generous. The Creamy Tonkotsu is a must-try!
