Seattle|This Thai Curry Noodle Bowl is a MUST-TRY!

Ginger & Scallion 📍500 NW 65th St, Seattle, WA 98117 Went in craving Hainanese Chicken Rice (perfect for my diet phase!), only to find out they’ve switched to serving ONLY Khao Soi—and holy wow, it was unexpectedly AMAZING! 🍜 Khao Soi = Northern Thai curry noodles with coconut milk + yellow curry broth, featuring soft noodles + crispy fried noodles on top. Rich, spicy, and addictive! What we ordered: 1️⃣ Beef Tenderloin Khao Soi ($25) The beef was ridiculously tender—melt-in-your-mouth soft! The broth was thick (almost like a noodle-tossed dish), boldly flavored, and just spicy enough to tingle at first before mellowing out. The fried chilies tasted just like Sichuan chili oil—chef’s kiss! 2️⃣ Bone-in Goat Cubes Khao Soi ($19) New Zealand goat—zero gaminess, just succulent, flavorful meat (even the bones were tasty!). 3️⃣ Thai Iced Tea ($4) Nothing groundbreaking, but balanced and not too sweet—perfect with the curry. 4️⃣ Thai Tea Tres Leches Cake The star dessert! Moist, fragrant with tea, and not cloyingly sweet (the highest praise for North American desserts!). Verdict: Didn’t get chicken rice, but discovered a NEW OBSESSION.
