🍜 Seattle Ramen | Danbo – Worth the Wait!

If a restaurant in Seattle has a line, it might not always mean it's amazing – but when the same spot is also popular in Vancouver and New York, you know it’s the real deal. Danbo has become my go-to for consistently great tonkotsu ramen in Seattle. Even on a weekday evening, we waited about 30 minutes, and it was totally worth it. Check out the menu in the pics for reference! 🍥 What We Ordered: 1️⃣ Classic Ramen Signature tonkotsu pork broth – a reliable and comforting bowl. The broth is milky, rich, and well-balanced – not too salty or overly greasy. 2️⃣ Negi-Goma Ramen A richer, more aromatic bowl. I asked for thick, firm noodles, which were chewy and perfect. Toasted sesame and green onions added deep, cozy flavors. 🍳 Must-Add Toppings: Soft-Boiled Egg: Perfectly cooked, with a slightly runny yolk and seasoned just right. Extra Chashu: Go for the 6-piece upgrade! Tender, lightly fatty, and satisfying. Kaedama (Noodle Refill): For $2 (full) or $1 (half), you can add more noodles to your broth. Pro tip: Ask for the refill halfway through your bowl so the broth doesn’t run out! 🧾 Highly Customizable: You can choose noodle thickness, firmness, broth richness, garlic level, soy sauce, and spice. Love the control! 🪑 Vibe & Wait Experience: Cozy and compact, with limited seating – but turnover is pretty quick.
