The winter tomatoes here are worlds apart from the ones in the trout dish; paired with bite-sized garlic croutons and good-quality avocado, plus a few sneaky strips of pickled anchovy. 🥩 Mystery sausage – tender, perfectly seasoned, not salty. Served with walnuts, celeriac, and apple sauce made from apples roasted in the restaurant’s backyard oven. 🍞 Sourdough – crackly crust, soft crumb, served with salted butter that never feels heavy. 🥯 “Semla” – a seasonal French pastry that looks like a semla: lemon-curd cream + dense, velvety whipped cream. 🥖 Cardamom roll – subtly salted, utterly moreish. 🥐 Ever-present Luna – incredibly soft, sweet and fragrant. 🍨 Dessert pick: caramel-milk stracciatella.
