The Best Lamb Pilaf in All of Seattle Has Arrived! 🥘✨
As a die-hard fan of Xinjiang cuisine, this newly opened Uzbek restaurant finally satisfied my deep craving for authentic lamb pilaf in Seattle! 😭 One bite, and I was instantly transported. 🍖 Plov with Lamb Shank: The lamb is braised until incredibly tender, falling right off the bone, with a rich, aromatic lamb fat fragrance. Most importantly, you can tell they use fresh lamb—no frozen meat shortcuts here (side-eye to that fake Xinjiang spot near Ranch 99 🙄). The rice is perfectly cooked—neither dry nor greasy—soaking up all the savory meat juices and the sweetness of the carrots. Carrots and raisins are added in just the right amount, adding texture and layers of flavor. The seasoning is on the lighter side, not overpowered by heavy spices like some other Afghan or Iranian pilaf spots in Seattle. It tastes closer to the pure, hearty flavor of Xinjiang-style pilaf I remember. 💰 Value & Sides: $25 for a huge plate, and it comes with a tomato-cucumber-onion salad + Pita bread—definitely filling! The mint tea 🍵 is also excellent, refreshing and cuts through the richness perfectly. 🍢 Other Tries: I also ordered two chicken kebabs. They were tasty, but not as standout as the pilaf.
