Just a few meters away from the Central Market, there's another spot, an old lady's tripe sandwich place, which is also quite good! The classic tripe sandwich, Panino al lampredotto, is filled with tender, juicy tripe. I recommend adding chili🌶️ for an extra burst of flavor. - 🥣 Tripe Sandwich The tripe is perfectly cooked. Having tried a couple of other places first, I was almost moved to tears when I tasted this one. The tripe, stewed with a variety of vegetables, has no off-flavors at all. It's soft, chewy, and delicious! Paired with the green Salsa di Verde and the red Salsa di Piccante, the refreshing and slightly spicy sauces complement the tripe beautifully. It's truly amazing! - 🥣 Florentine Tripe Stew A very classic Tuscan dish, typically made with the first and second stomachs of a cow (tripe and honeycomb tripe). These are stir-fried until fragrant and then slowly stewed with tomato sauce, vegetables, and spices.
