The aroma is so rich it explodes in your mouth, with layers of salty umami, nuttiness, and creaminess. It’s the kind of deliciousness that makes you instantly fall silent, savoring every second. 🥩 Beef Tartare | Victory for Detail Lovers The second course, beef tartare, is brilliant. The bread is mixed with spices that don’t overpower the dish—just when you think “this should be plain,” it gently teases your taste buds. If I could only recommend one dish from this meal, it’s definitely 👇 Morel Mushroom Pasta. I literally wanted to lick the plate clean 🤤! The umami of the morel mushrooms is so intense—it’s like 👉 “so umami it’ll blow your mind” 🤯. It’s not at all stacked with salt or cream; it’s the kind of sophistication where “natural umami is maximized.” I can barely put into words how good it is—I can only say: This is the most amazing pasta I’ve had recently, bar none. 🥩 Meats & Dessert in the Second Half Courses 6, 7, and 8 are three meat dishes, all up to standard—stable performances that fine dining should deliver. But maybe I was spoiled by the umami of the morel pasta earlier, these later dishes didn’t leave as deep an impression.
