This time, we tried the February seasonal menu~ 1️⃣ Appetizer: • Fried sesame tofu with sea urchin: Crispy outside, tender inside, paired with sweet uni and light broth. The homemade tofu has a chewy texture—so good! • Stewed soybeans with seaweed cream sauce: Layers of flavors with herring roe, sardines, and more, creating a complex taste experience. 2️⃣ Soup: • Celery root puree with crab fish cake soup: Smooth as cream, sweet crab fish cake, topped with lemon zest and caviar—refreshing and aromatic. 3️⃣ Warm Dish - Wagyu: • A5 Wagyu with eggplant: Tender, rich Wagyu balanced with eggplant and taro, enhanced with wasabi. 4️⃣ Sushi: • Aged bluefin tuna nigiri: Intense flavor from dry-aged tuna, perfectly paired with vinegared rice. • Uni and crab sushi: Sweet Hokkaido uni intertwined with crab meat—pure umami bliss. 5️⃣ Eho-maki: • A roll filled with braised Wagyu, eel, and more, symbolizing good luck.
