Warm Korean Comfort Food on a Chilly Sunday
A sudden temperature drop on Sunday ☔️ had me craving something warm, so I chose this Korean restaurant in Bothell 🇰🇷. Bossam 🐷 Having tried nearly 10 versions of bossam in Washington, this one sits right in the middle—decent but not outstanding. The pork belly had a good balance of lean and fatty meat, though it was cut a bit thicker than ideal, requiring more chewing effort. On the bright side, the veggie assortment was generous: fresh, crisp lettuce, perilla leaves, and pickled radish, all perfect for wrapping and balancing the richness. Gopchang Hotpot 🐂 The beef intestine hotpot had a rich yet not overly greasy broth. I chose mild spiciness, which made it soothing and warming. The udon noodles were springy and absorbed the flavorful soup well. The only downside was that the larger pieces of intestine were quite chewy—a longer simmer would have made them more tender 😝. The restaurant felt spacious and comfortable, and we were served warm barley tea 🍵 as soon as we sat down.
