š Spring Bistro - Xiaochun House A unique fusion spot in Bothell combining American-style Chinese dishes with Hunanese cuisine. Rumor has it this place shares some roots with the famous Dongting Chun restaurantāso we gave it a try! The menu is compactāhalf American-Chinese classics, half Hunanese specialties. We ordered their signature Farmhouse Stir-fried Pork, Pulled Pork with Fried Egg, Sizzling Plate Squid, and a side of Egg Fried Rice. š„¢ Farmhouse Stir-fried Pork Flavorful and satisfyingāthe portion looks modest but eats well. The peppers add aroma without being too spicy, and the pork is tender and tasty. š„¢ Pulled Pork with Fried Egg Decent but not as memorable as the stir-fried pork. Thereās a very mild pork aroma (which I didnāt mind), and the thin crispy cartilage mixed with meat added nice texture. š„¢ Sizzling Plate Squid Not a standoutāthe seasoning clung mostly to the onions and peppers, while the squid itself remained bland. It arrives as a whole squid, and you get scissors to cut it yourself āļøš. š„¢ Egg Fried Rice Standard and simpleānothing special. š” Final Thoughts: Worth a visit if youāre nearby or passing through, but maybe not worth a dedicated long trip.
