This yearβs autumn menu at Yumeya is subtly refined compared to last year β with even higher quality silver-skinned fish and some delicious upgrades! π Standout Nigiri & Dishes: π Sanma (Saury) with Scallion Oil Firm, flavorful, and beautifully balanced β the best piece of the night! π π‘ Needlefish Chewy, clean, and full of oceanic flavor π π¦ Kegani Crab from Echizen Port A blend of meat from 8 crabs served in 6 elegant parts π₯’ The dashi broth is simmered from the shells β deep and aromatic! The uni, simmered in sweet soy sauce, had a mentaiko-like texture β rich and intense! π¦ Ise Ebi (Spiny Lobster) Plump, bouncy, and incredibly fresh! Served with crispy mountain yam tempura, sprinkled with matcha salt π€π΅ π Matsutake & Chestnut Rice Upgraded and more flavorful this year!
