Great to see a nice restaurant like this one open in Perth which Perth does need more of. Whilst I have given only 3 stars I do see potential with this place, it can easily be 4 stars. What I liked – the restaurant has been outfitted to a high standard, it has nice and comfortable interiors. Starters and dessert were highlights for me; I am not usually a huge fan of chocolate desserts but paired with olive oil gelato was great. Steak tartare again a classic done well but nothing I have never tasted before. Everything was decent enough; it is basically fine dining classic French food and portions were a good size – you will not leave hungry if you are dining on the set menu. I enjoyed table side cocktail trolley, that is a nice touch.
Things for improvement/review: Reservation: I booked for a large group 8 people which I booked more than a month in advance. Upon reservation they took a $100 per person non-refundable deposit which I think is unnecessary. I understand a cancellation fee for a no-show etc. but taking a non-refundable deposit so far in advance is excessive and not the norm for any fine dining restaurant and they really should look at changing this. Service – overall friendly and comfortable. Our server was nice and friendly, but I think for this price point it should be better. It is about the little things that you would expect from a fine dining restaurant - water always being topped up, food always being served to the right person specially when it comes to dietaries, blinds should automatically be down while the sun is setting as to not permanently blind people etc. This sort of restaurant at this price point is typically a special occasion restaurant so most people dining here would be coming for some sort of celebration. We noted two birthdays on the reservation, and they did have a nice handwritten card for the birthdays on arrival but one thing I think they should have done but didn’t is arrange for a complimentary birthday dessert with a candle. It does not need to be extravagant but something simple and thoughtful adds a nice touch to round out someone’s dining experience.
One thing they should really look into especially going into the warmer summer months, is closing the doors/windows and putting the aircon on. We had a 6pm dinner so the sun was still setting, and it was a warm afternoon/evening. For whatever reason they leave the doors open, which I understand if you want a very relaxed indoor/outdoor vibe but for a fine dining experience you want a temperature-controlled environment and not have your customers swatting flies. That was the least pleasant part of the dining experience, although once the sun did set the flies did leave.

Standout dishes included the flavourful sirloin with chimichurri, the indulgent whiskey date pudding, the heavenly Truffle Campanelle, the mouthwatering Cured Hiramasa Kingfish, the flavorful Roasted Jerusalem artichoke, the decadent Half-shell scallop, the tantalizing black onyx 3+ Steak Tartare, the delightful Sam’s Sourdough served with Pepe Saya cultured butter, burrata with pickled cucumber, the crispy Tempura oyster mushrooms with porcini salt, and the fresh oysters. Read moreWe were delighted to have dinner at Gibney Cottesloe this evening. I was looking forward to trying this restaurant and am very glad we finally made it there. I am glad we waited long enough to allow the teams to find their rhythm - it’s always a mistake to judge a restaurant soon after opening date. Service and food were impeccable which, in Perth, is not easy to achieve. Every morsel of food was clearly well thought out, well sourced and well executed. The serving staff were all (without exception) helpful, friendly without being intrusive - 10 out of 10 in my view. We had a couple of snacks to start with - tempura oyster mushrooms with oyster mayo and pissaladière - having had my grandmother make pissaladière my entire childhood and having enjoyed her very traditional version of this dish for decades, I had high expectations. These delightful little bites were a modern take on an old, fabulous classic. Absolutely scrumptious and I was left wanting more. Had I had sufficient room in my stomach, I would have had pissaladière for dessert! The tempura oyster mushrooms were out of this world and Gibney is worth visiting just for those alone. Entrées were oysters kilpatrick (not my choice by any mean - I find kilpatrick to be a fine way of ruining one of this world’s most amazing, textured foods) - but my husband loves these - and was floored by the flavours. I had the burrata with zuni picklesLa Delizia Latticini just enough mint to elevate the dish. The burrata is from La Delizia Latticini so it could not have been better. The combination of the soft, fresh curd, the tangy, slightly crunchy zuni pickles, the nuttiness of the almonds and the freshness of the mint made it an absolutely amazing dish. I could not finish it, but took the rest away and I very much look forward to having it tomorrow. For main, we shared the 750g ribeye with oyster mushrooms and Diane sauce. This - again - was incredible. Steak was charred and cooked perfectly. The sauce was tangy and perfectly balanced. The mushrooms could not have been any better - I like a place where the chef knows not to overcook mushrooms. We had a side of frites and tarragon mayo - a nice alternative to frites and béarnaise sauce. Again, very nicely balanced and well executed.
