The atmosphere of a snow-covered rustic inn is very authentic. The food shows a lot of creativity and is made of excellent ingredients. The cooking demonstrates multiple techniques. The service aims at being very attentive and warm. The genre of the place is definitely “slow food”, although the service does seem somewhat slow regardless.
There is, though, something that stands between this restaurant and providing a truly memorable experience, and it requires more attention to fine details.
At a restaurant of the level Flos aims at, it is very surprising that the waiters do not remember which diner ordered which dish, asking you about it and moving silverware around.
Furthermore, while the unique pottery is very creative, it doesn’t seem connected to the dishes. For the appetizers, for example, it takes more time to set the pottery and the stones on the table, than to consume the actual food. The small tree branches used on the table for the silverware are also not really related to the dishes, and are quite uncomfortable.
Portion sizes sometimes are also not entirely aligned with the bread served with the dishes.

I ordered the cod, which was served only as a fried fillet alongside a side of potato salad. The cod was overly salty, requiring it to be sent back twice. The staff assured me no salt had been added, which left me a bit confused.

Read moreThe food at Flos was exceptional, their set menu takes such simple food concepts and makes them taste beautiful, the presentation of each meal was also stunning. One of my meals was the baked egg and potato and it is genuinely up there with one of the best meals I've ever had.
I took one star off for the atmosphere because we went on a Sunday evening and it was very quiet.
