Buckle up, because this is a long one. We were staying the hotel July 2023 and decided to go to Gustav's for dinner because of the gift card that came included in our package.

The menu seems perfect for the type of food that they serve. It took a while after we ordered drinks before we were able to order our meal, but so far no big deal.

We were given two slices of bread that were cut in half which seems slightly too little but they were nice and warm and the butter was good.

We had also ordered a salad, however, and we waited close to half an hour for that to come so at that point it would have been nice for something to be done to check if we want another drink or if you want a little more bread or something of that nature.

Eventually our server came and switched out our cutlery for what was presumably the cutlery for our filet mignon. At that point we asked if our salads were coming and our server seemed a bit flustered but went back and got them immediately so they must have been waiting and just hadn't been delivered. Our server apologized and said that something would be done for us. That was appreciated because it was a simple mistake. This comment will come back again later.

We ate our salads which tasted pretty good although I'm not sure if it seemed slightly overdressed because the length of time the salad sat out while dressed.

Our steaks came basically right after my wife finished her salad and so the timing can't be purely a coincidence. We had ordered medium rare and medium for our filet mignon. They were medium and medium well according to the menus guide on what the inside of the meat should look like. We had to switch our plates because the filet migons were delivered to the wrong person and even then after we cut them open my wife noticed that hers didn't have any red but was basically pink all the way through. Mine had a hint of pink in the middle. For a 50$ 7oz filet mignon at a steakhouse, it had better be cooked properly, period. But it's possible it was cooked properly and left under a heat lamp. Either way, it's an issue.

We ordered the peppercorn sauce on the side. The steak itself was delicious and the fingerling potatoes we got were also good. The seasonal vegetables that came with the meal were not under seasoned, they were completely unseasoned. It was a little bit strange to get bok choy as one of the vegetables but that wasn't the main issue obviously.

There was a long gap after we finished our meal where we expected our server to come and ask if we would want coffee or tea or dessert or something of that nature but given the long gap we elected to not order dessert.

Our server brought the bill took off the value of our gift card and despite saying earlier that something would be done for us for the extremely long wait between our order and their salads coming and the fact that the meat was overcooked, nothing was done and we were charged the full price.

To say that we would not be going back again for dinner would be an understatement, despite it being conveniently inside of our hotel. There were plenty of opportunities to avoid the errors or make up for them, but the restaurant chose...

My wife and I recently had the pleasure of dining at Gustav Chophouse and Bar, and we were absolutely blown away by the exceptional experience we had. From the moment we stepped foot into the restaurant until the moment we left, every aspect of our evening was truly remarkable.

To start off our dining adventure, we opted for the escargot as our appetizer. The escargot were cooked to perfection, with a rich garlic butter sauce that added a delightful depth of flavor. Each bite was a heavenly indulgence, and it set the stage for what was to come.

The main highlight of our meal was the special tomahawk steak, and it was nothing short of spectacular. Cooked precisely to our preferred level of doneness, the steak was juicy, tender, and bursting with flavor. The generous portion size ensured that we left the restaurant fully satisfied. Accompanied by a glass of red wine, which was expertly recommended by the attentive and knowledgeable staff, our dining experience was elevated to new heights.

Speaking of the staff, the service we received was outstanding. The waitstaff was attentive, friendly, and went above and beyond to ensure that our needs were met. They provided excellent recommendations, answered all our questions, and made us feel genuinely welcomed throughout the entire evening.

We were very excited to go to Gustavs after reading the menu online and having a great meal the night before at The Mill in Thornbury.

We had been to Gustavs once before for an appetizer, drinks and desert which was a memorable experience, sadly this experience would be very disappointing.

Our waitress was very nice and personable and I feel like she should be commended for doing her best in a tough situation. When we arrived it wasn't busy and she was great and attentive.

We started with the scallops and the presentation was really nice and the pea and bacon puree was delish. The scallops however were still partially raw.

They didn't have the prime rib which is what we came for but it's a Tuesday in slow season so we understood. We ordered the 10 ounce striploin & the rack of lamb. By then the restaurant got a bit busy. I mean it was less than half full. The waitresses were running around like crazy because they were severely understaffed which doesn't seem acceptable in such a high end restaurant.

We waited almost an hour for our main course. Medium rare steak and medium cooked lamb. The steak comes out charred on top and is very mediocre. More medium- medium well but if the steak is good I am not very fussy. The $60 steak is not as good as the $8 steak I made from the grocery store a few days earlier The lamb is a dud. The lamb comes encrusted but just is the most tasteless piece of lamb we have had in our lives. Sauce might have helped but there was none. The sweet potato fries were excellent as the side and we ate them all.

For dessert we have the chocolate cake and it's fine. We did mention our disappointment to our waitress and they did try to make it right which was fair and we appreciated it.

The ambience is really nice and the service industry has been hit hard with COVID so we understand struggles but the management and cooking just didn't seem close to par with the prices.

Walking in, we were greeted by the hostess and took us to cozy corner of the restaurant as per our request. The ambiance was warm and dark. They also had a few paintings on their walls to sell that were made by local artists which was really nice. Our server was polite and friendly. She made sure we had everything we needed. We ordered the oysters, the soup of the day, filet mignon with herb roasted potatoes and seasonal vegetables and the new york striploin with chive mashed potato and garlic mushrooms. We were quite pleased with the oysters (5/5) and the soup which was Chipotle Tomato (5/5). The soup had a nice smokey flavour and a kick from the chipotle which paired well with the sweetness and tanginess of the tomato soup. Filet Mignon with Herb Roasted Potatoes and Seasonal Vegetables (3.5/5). The steak was cooked to my liking (medium rare). The char to it heightened the flavour of the steak. The steak also had bacon wrapped around which I couldn’t really taste. The herb roasted potatoes were crispy on the outside and soft on the inside. The kitchen staff unfortunately forgot to add my seasonal vegetables on the plate which we let our server know. The vegetables were underwhelming as they were overcooked. We hope for the staff to be more attentive in future orders. The New York Striploin with Chive Mashed Potato and Garlic Mushrooms (4/5) was also cooked medium rare however, we did find some parts of the steak to be slightly overcooked. The char also heightened the flavours of the steak. The chive mashed potato had a smooth texture. Butter on the side would’ve been a good idea. The garlic mushrooms were deliciously cooked. It was bouncy and juicy, coated in the garlic flavour we were looking for. They also gave out bread and olive oil and balsamic vinegar for starters.

We had reservations for 8pm, and did have to wait about a half hour or so for a table, so we happily sat at the bar. At all times the owner as well as the servers were all very attentive to us and let us know that our table would be ready very soon. I believe they were a bit short staffed but the way they handled everything was phenomenal. They were all working so hard to make sure everyone had what they needed, you couldn’t ask for anything more! When we sat at our table, Suzanne, our server went over the menu with us and gave us recommendations, we really appreciated that as it was our first time here. We started off with the fried brussels sprouts, as well as the autumn harvest salad and a caesar salad, all were delicious. I personally had the autumn harvest salad and it was super fresh, one of the best salads I’ve had at a restaurant. For our main we chose the 24oz New York strip to share, we also got 2 lobster tails, sautéed garlic thyme mushrooms and the chive mashed potatoes, Suzanne recommended these items and we were completely satisfied, it was honestly the best steak I’ve put in my mouth. I am still thinking about it today! We were then offered dessert but at that point we were totally stuffed, Suzanne brought me out a piece of their chocolate cake to go and I must say, it definitely hit the spot after our two hour drive back to the Bruce Peninsula! We look forward to going back very soon. Thank you to the staff at Gustav Chophouse and Bar for making my birthday one to remember.
