But quality of food weighs more and unfortunately it left a lot to be desired. the potato salad served on the house was amazing, the best I've ever had - this should be on the menu. the bread with butter were delicious. -- the rabit confit was uncooked - pinkish meat that would not come of the bone; struggled with knife and then with teeth and there was still some left on the bone. Also, way too salty. Definitely not the definition of a confit, or of any white meat dish. Something I should have sent back to the kitchen and not pay for it instead of just mentioning it to the staff. pork also pinkish inside although I complained about the rabbit being uncooked, the deer that I ordered as the main dish came the same way, very chewy, with the texture and feeling of raw meat. the desserts were good My husband and I eat out quite often and this has never happened to us and is unacceptable for any restaurant, let alone a $$$ one. Being such a highly rated restaurant I find it hard to believe that the chef does not know how to cook meat. Was he in a rush? Was the meat not ready to be cooked? we came at 6 pm which may be early for the French but the reservation was made a couple of days in advance. They even have a garden on site to grow many of the vegetables etc they serve in season. As such the menu can vary dramatically on a regular basis depending on the season and what is available. The dishes are typically small somewhat tapas style to encourage patrons to try different dishes. Typically it will be about 3-5 dishes per person depending on your appetite. I tried and strongly recommend trying the discovery menu which is a 7 course meal selection chosen by the chef. You can pair this up with the wine pairing option with each dish which featured a few local wines that were very good finds. Je tiens à signaler que je ne critiquerai en aucun cas la qualité des plats, le service ou le cadre proposés (logique: on a pas su y aller!), je voulais juste signaler un incident concernant notre réservation, qui à notre sens, mériterai de laisser une trace. J’ai réservé le 15 février pour 18 personnes, pour la date du 22 mars, en sachant que quelques invités, étrangers, partaient déjà le lendemain pour des raisons professionnelles. Le mardi 26 février, soit presque deux semaines plus tard, nous sommes appelés par l’établissement pour nous dire qu’un autre groupe un peu plus grand avait déjà réservé avant nous et qu’il s’agissait d’une erreur commise par une étudiante... la gentille dame que j’ai eue au téléphone n’avait pas du tout un discours ambigu/hésitant et parlait avec beaucoup d’assurance. Par ailleurs, étant habitué à aller au restaurant, il est très suspect de nous prévenir si tard alors que ce genre d’erreur est impossible quand on tient un registre, ce qui est certainement le cas dans un restaurant si populaire. Résultats des courses: on nous a proposé de venir le lendemain, ce que nous avons bien sûr refusé vu que nos convives n’étaient pas toutes disponibles. Sans pouvoir le vérifier, je pense sincerement que notre réservation a tout simplement sauté (je l’ai deja fait, il suffit de connaître suffisamment les gérants) au profit de cet autre groupe qui, j’espère, passera une excellente soirée.
