Service was great, even though it was pretty busy (Friday at 7pm) our server was very attentive. The pace of the meal was a bit slow, but not anything horrible. Drinks were good. The watermelon mojito specifically was tasty and refreshing. The homemade baguette was good while the focaccia was fine. Maybe better with oil and balsamic vinegar instead of just butter. Appetizers were fine. Cracked conch was basically fried calamari with less of a chew. It leaned more on the saltier side, but overall was fine. The crab cake was good and had a lot of crab. The main courses, however were very disappointing. After reading other reviews, we ordered the crab linguine and seafood rundown for our main course. The crab linguine was overly lemony and had way too much black pepper. It did have a good amount of crab though. The rundown was way different than I expected. Despite the pictures seen online, I didn’t receive a lobster tail, so…$40 for a small piece of fish, one shrimp, one scallop, and 6 mussels that were on the smaller size seemed hard to justify. The description also reads, “Seafood poached in spiced coconut broth”. Seafood is a bit ambiguous, so maybe they had no lobster today, but I wish it could have been replaced with an additional shrimp or scallop or something. The spiced coconut broth was a crazy mislead. The broth I received seemed almost tomato based with maybe a hint of coconut. Even when I look at the dish I got versus other pictures posted, the broth looks way more on the red/orange side than other images posted with a whiter/creamier looking broth. Fish and shrimp were overcooked, and mussels had a strong fishy taste. Quite a disappointing experience.

Extensive menu and the waiters bring over these huge chalk boards describing all the options. Twenty years ago and now, still the Very Best Dessert in the Island. Sticky Toffee Pudding. Also great mocktail options. I loved the snapper but found the soup I had as an appetizer to have the taste and consistency of Campbells tomato soup. Julie had her favorite meal of the week. A ricotta stuffed long noodle of pasta. Mom wasn’t sure her fish was what she ordered. So a little hit or miss. We arrived close to opening time without a reservation. Then this place just completely filled up. It’s lively, energetic. Lots of conversations all about but outdoors the breeze carries everything off into the night.

The ambiance was lovely and the service was also great. I was just expecting a bit more (and less salt) from some of the dishes!

This was my first dinner on vacation last night. My parents previously came and enjoyed it throughly, so I was excited to try! We've been on island for two weeks and dinner at Calypso last night eclipsed all of our dinning experiences thus far in every way. In the crabs cakes you'll find very little except crab making the flavor simple and delicious. The Blackened Snapper and grilled Tuna were both cooked perfectly - still moist, flavorful with subtle char - making the delicate butter sauce a compliment to and not overpowering the fish. Finally, the Sticky Toffee Pudding was heavenly - bold, but balanced flavors paired with Zacapa Rum XO.

We had dinner at the bar - which everyone should do at least once - and spent most of our time marveling at the well-oiled machine that is Calypso's service staff. They buzz expertly by one another assisted by skilled, energetic bar tenders and what can only be an expert front of house manager. They all work hard and simultaneously seem to be having the time of their lives.

Finally, the ambiance is cozy in the way that I imagined an island restaurant would be - colorful, warm light that's inviting and not too bright, dark woods, accent lamps and cafe lights on the deck.

Do not miss this dining experience while you're in Cayman!

I’m a bit shocked how much I loved this place. (I shouldn’t be surprised, but even well-reviewed restaurants can be a bit hit or miss on island, and we’d just had a less than stellar meal next door).

We went for lunch as a party of five on a Sunday with a reservation, and things were busy. There was no shade on the deck, so we sat just inside. (They should shade their deck, like the restaurant next door. The dining room is a little dark, but it was bustling and energetic, with lots of windows).

Our server was helpful, and steered us towards some things (the conch fritters, some of the specials) and away from others that he thought didn’t suit our goals (the paella, and the lobster bisque, though both might be good).

I had the clam pasta special, which I think might actually be a regular item. It was absolutely delicious. The clams were cooked beautifully (I hate when they’re over cooked and gummy), the pasta was Al dente, and the sauce had a beautiful brininess to it (white wine, oil, garlic). Everyone at the table liked their meals. Even the bread was good. We enjoyed a bottle of New Zealand Sauvignon Blanc, and two sticky toffee puddings to end.
