간자커우 북가에 위치한 100년이 넘는 역사와 전통을 자랑하는 소고기 면 요리 및 장조림 전문점이다. 근처에 이렇다 할 관광지가 뭐 없지만 그로 인해 로컬 손님들이 대부분이었다.

2020년부터 올해까지 내리 미쉐린 가이드 빕 구르망에 선정돼 왔고 시드니 근교인 채스우드에도 지점을 두고 있다. 정작 베이징엔 다른 지점이 없어 뭔가 중국답지 않아 신기했다.

주문은 일단 자리를 잡은 다음 여느 중국 식당처럼 QR코드로 하는 시스템이다. 면과 달리 장조림의 경우 영수증을 들고 직접 주방으로 찾아가서 원하는 부위를 선택해 받아와야 한다.

장조림과 국수 한 그릇 그리고 중국 로컬 음료 하나를 합쳐 가격은 총 45위안 나왔다. 아무래도 장조림이 더해져 특별히 저렴한 편은 아니었는데 장조림을 안 시킨 테이블이 없었다.

장조림은 비계를 좀 섞어달라 요청드린 덕에 살코기가 군데군데 섞여들어 있었다. 간장과 향신료가 들어간 양념에 푹 졸여진 소고기를 러프하게 찢어냈으며 양념을 살짝 얹어내줬다.

국수는 소유라멘처럼 탁한 색 국물에 면이 잠긴 채 생양배추가 듬뿍 얹어 나오는데 채소로만 국물을 낸단 특징이 있다. 그래서 국물이 진함에도 소유라멘과 달리 기름지지 않았다.

면발을 들어 올리자 오동통한 자태가 드러났고 국물이 배어든 게 육안으로도 느껴졌다. 씹었을 때 은은하게 밀가루 향이 느껴지면서 탱탱하게 끊겼고 찰지게 넘어가며 빨려 들어갔다.

이어 본격적으로 장조림을 맛보니 살코기는 결대로 식감이 확실한 반면 비계는 혀 위에서 녹았다. 양념은 국수 국물과 비슷했지만 더 짭조름하고 기름기가 더해져 풍미가 한층 깊었다.

장조림 고기 씹는 식감과 면의 쫄깃함이 서로 잘 어울려 이후엔 조금씩 국수 위에 얹어 즐기기도 했다. 장조림이 대체로 큼직해 면발을 감싸듯이 집어먹으니 감칠맛이 더욱 살아났다.

주변 로컬 손님들을 살펴보니 다들 장조림을 듬뿍 얹어 드시길래 따라 해보니 이게 정답이었다. 양배추가 넉넉히 들어가 특별히 짜지지도 않고 완벽하게...
