Firstly, this is a restaurant, not hotel.
同和居 - a chain restaurant serving local 京菜. We had some traditional dishes such as 鲍汁萝卜,赛螃蟹,三不沾 and of course Peking Duck. The duck isn't as good as 四季民福, a little too oily but still decent. The 赛螃蟹 was apparently bad, in the sense it didn't taste like it should according to the locals, but if I treated it like fried egg dish, it was not bad tasting 😂. I loved the braised radish and this other fish dish, 醋溜鱼片 that had a strong taste of vinegar 就是爱吃醋.
三不沾 is a 功夫菜 that's not readily available because it really takes a lot of skill to make. Simple ingredients of just egg, flour sugar and oil, and the chef needs to keep stirring at it until it achieves a texture that is 不沾锅,不沾筷子,不沾牙. Often times it ends up too soggy or burnt and hard.
