CUHK Paper & Coffee — Restaurant in Sha Tin District

Bureaucratic and unacceptable treatment of customers: I arrived with a friend at 11:10 and was informed that lunch is only available at 11:30, but I could order pancakes or some other desserts before that. I decided I’d order a pancake first and we would order our lunches 20 minutes later. I was informed that this arrangement was unacceptable as there was a minimum charge per person, so I offered to pay for the lunches up front in addition to ordering the extra pancake (the restaurant was empty), but was also told this is unacceptable. When I expressed discontent, the attitude of the staff was extremely bureaucratic and rude. Basically they feel that rules are rules and they must treat everyone the same (again the restaurant had maybe two or three customers). I will be further escalating this complaint with CUHK administration. It is unacceptable for on campus businesses to treat staff and students in this way. One would think they would be interested in earning money during a time when restaurants in Hong Kong are struggling...

平時少喝 Kenya， 太 common 了， 今天忽然想試試。

咖啡師試喝，與同事商量， 放下，再煮。

“有什麼問題？” “甜沒有全部出來。”

好，認真。

這次刻意在上壺做功夫，似在加壓。

第一口，嘩，蜜糖！ 甜出來了~ 可惜，美事稍縱即逝。

中段，蜜糖淡出， 黑加侖漸入。

尾段，莓味增，但不強烈。

對 Kenya，有了新認識。

Double Espresso @ Paper & Coffee by Brew Note Coffee Roaster

點了，坐吧檯。

看著咖啡師，試了又試， 和同事討論，才端上。

“見你試了好幾杯。” “不好意思，因為天氣，而且這是新 blend。” “新 blend？” “比之前烘得較淺。”

沒想像中淺， 質感薄，酸沒蓋過甜， 很易接受， 過後留有一點果仁香。

“不錯。” “不好意思，讓你等。”

沒關係，好東西，等待之中，最美。

慵懶 mode @ Paper & Coffee by Brew Note Coffee Roaster

兩個月沒來， 依然熱鬧。

點了 House Brew Coffee， 順口，平易近人。

土地問題， 香港咖啡店，放幾張小桌，剛剛好， 了不起，多加兩三張吧檯高凳。 Paper & Coffee 不但有卡位， 還搭建木平台，放幾張茶几， 脫鞋踏上去，放鬆。 今天多了幾個大豆袋， 靠近牆邊， 整個人陷進去， 雙腿盡情伸展， 茶几上放齋啡， 呷一口，看看妹， 慵懶 mode 開啟。

House Brew Coffee @ Paper & Coffee by Brew Note Coffee Roaster

House Brew Coffee 招牌齋啡。

齋啡二字，非常茶記， 出現在西式咖啡店 menu， 在 Espresso 與 Long Black 之間，特別注目。

沒看如何萃取， 一大杯，非 Espresso， 港式齋啡一般亂酸得嚇人， 這杯 House Brew， 順口，果酸輕輕，稍縱即逝， 沒有留下澀味， $24 的齋啡良品。

平日滿滿學生， 星期六街外客有八九成上座率， 星期日休息， 大學一隅，比得上大街大巷， Perfect business model~

野菌飯糰+Flat White (Oat milk) @ Paper & Coffee by Brew Note Coffee Roaster

再次潛入大學咖啡店看妹(誤~)， 其實專程試飯糰， 對~咖啡店賣飯糰唷！

試賣第一天， 素食只有野菌， 是 Vegan， 味道走平淡路線， 自家製，新潟米使用，濕軟度剛好， 不會太乾太硬， 要猛灌咖啡解救， 剛好夠上下課之間填一填肚。

可惜包裝垃圾無法避免~

Flat White 用 Oat milk， 店員提醒有點苦， 對我來說還是略甜。 (外面改 Oat milk 加$5，這裡只加$3，果然是大學飯堂，佛心~)

Ethiopia Geisha Village Surma Natural @ Paper & Coffee by Brew Note Coffee Roaster

煮好，咖啡師試喝： "可以好一點，我再煮。" 型格可愛咖啡師抱歉。 "沒關係，我有時間。" 欣賞她對出品有要求。

重來， 虹吸，一開始就用熱水來煮， 水往上跑， 咖啡師另外注入一小杯水。

"冷的？" "室溫。" "用意是？" "調節到我們想要的溫度。"

下粉，攪拌。 "香氣有跑出來，跟第一杯不同。" "你有發現？其實第一杯不差，只是可以更好。" 點頭。

"你特意過來？" "對，也特意去過你們北角的店。" "我原本是北角店的客人。" 由客人喝到變咖啡師耶~

端出白色粗陶高瓶圓杯， 入口，清亮，甜味突出。 可以把 Ethiopia 的酸壓得那麼低， 少見。

"學生在排什麼？" "午飯。" "還沒到12點呢~" "因為我們沒早餐。" "什麼時間比較少人？" "一早開門，或差不多打烊。下午多學生窩坐，星期六多街外人。"

大學的簡約文青系咖啡店，到了 Lunch...

Waited for 30 minutes for dinner service, my turn in the line, last set of fried chicken was given out said need to wait for the next round in 5 mintues. Instead of taking my order and hoping they would ask me to keep my receipt so that I can collect it when its ready, the staff asked me to line up all over again. Lined up for another 30 minutes ended up only starting to eat after 1 hour. The only reason I lined up again is because they guaranteed the fried chicken to be available. Othereise I would have left. We are students we dont have all the time in the world, we need to study and work on our assignments. I do enjoy the food and come rather regularly but this incident really...
