There are lots of Sacha noodles in Xiamen and this one often comes up as a recommendation by YouTubers. I find the soup to be really light and lacks flavour. Noodles are soft and maybe overcooked. The best part is the freshness of the seafood. The squid is so fresh and perfectly cooked. Oysters are small and again super fresh with distinct white pepper taste.
