We visited this Iconic 3* restaurant since 1981 over a 2 night trip at the relais et chateau accommodation. What we loved: * outstanding service: - all the staff were thoroughly trained to talk about the place, the history of the restaurant and the village, each dish and wine, how the kitchen, chefs and waiters operate. This allowed us to have interesting conversations and share our love for food and foodie experiences - every dish was brought out fairly quickly so we didn't have to wait much between courses - they also told us they provide a babysitter to take the kids away and entertain them.while parents finish their deguaywtion menus * Georges Blanc himself came to each table take picture and sign copies of the menu * the use of local produces like the trout from the nearby river, the frog legs * copious and generous portions. Who gives you a whole lobster part of a 8 course meal? * perfectly baked bread with moist and dense center and crunchy crust consistent across all of his restaurants and breakfast buffet * confort: we had a big round table for two, other tables were nicely far apart and there was a separate stool for my bag * see through kitchen where you can see how it's all working What we didn't like so much * some of the taste associations such as the rich sauce with the lobster or chartreuse flavour in the coffee dessert * too rich, too copious and pricey 8 course menu. We were very frustrated we got so full too quickly and couldn't enjoy cheese, desserts and Petit fours * the lack of a real signature dish. Fortunately the chef kindly added some of his vonassian pancakes as an extra side so we could have a try. * the decor: red colour based which can feel a bit outdated nowadays

I went there on the way to explore the Spanish Michelin Stars, and judging back, I’m realizing how good of a stop it was before diving in another culture. What’s great here? You’ll experience a very classical French haute cuisine. But it’s not classism. For that you should go at the relais Louis XIII (and note that I love it!). Now, it’s classical haute cuisine. You’ll have all the reference to the land, and its heritage, and the homage to culinary references, but, I’ll be adapted (au goût du jour) so it does not seem old school. The best way to understand and visualize it is the meet George’s Blanc. He s an old man that look younger (with trying to look young) with enough energy to turn a village into an empire! Still, in his cuisine, you can feel the heritage and his love for his region. Interestingly, a small river runs along the restaurant giving this strange feeling that both the time passes, and yet it is suspended. Ambivalence is definitely the theme. I think it s definitely a 3 stars that an épicurien should visit. Not just because it’s a reference. Because it will give you a great reference to compare the others. Very Solid 3 stars.

Georges Blanc, incontestablement une réussite affichée et revendiquée avec arrogance ( Village Blanc), ce qui me fait toujours rire d’ailleurs ... À l’écoute avant même d'avoir goutté à l'assiette, on est déjà au cirque ! Nous avons souvent considéré que cet établissement était l’étape qui permettait de rendre notre route en direction de la Riviera plus agréable.

Il y a bien longtemps que nous n’allons plus au gastro, devenu une cafeteria grand luxe . Sans doute parce que la qualité culinaire n’est plus présente au diapason d'un service dégradé et d'un décor aussi triste que poussiéreux . Un environnement en tout état de cause très en retrait des prétentions affichées par une direction campant sur ses étoiles sans aucune remise en question. La brasserie nous semblait être un bon compromis, une carte simple et rapide pour une pose. Bref ce lundi c’était notre dernière tentative, en ce lieu magique par son cadre et l’histoire proposés aux voyageurs ...Mais la carte postale et bien loin de la réalité . Accueille standardisé à la Mc Do, tenue self-service ... Bien loin des standards d'une brasserie ou tablier blanc, chemise, cravate, et gilet ou veste blanche serait plus agréable qu’une simple tenue sans caractère ...

Quant à la carte classique on cherche en vain ce qui pourrait la différencier d'une autre affaire sans identité et sans renom À vrai dire il ne manque plus que le panier avec les crayons de couleurs pour dessiner sur le set de table de l'empire GB ! Même la nappe façon brasserie a déserté la table ...

Au niveau du service ce n'est pas mieux, sans doute la rançon de la médiocrité de la formation et de la rémunération . Les serveurs portent les assiettes à mains nues, même le liteau a quitté les lieux, oubliés le plateau .

L'hygiène est complètement négligée faute de management professionnel et les mêmes serveurs passent de table en table avec des assiettes desservies et sales mélangées à des propres pour vous servir, l’empreinte Covid et la folie de la propreté a disparu.

Quant aux verres apportés ils sont déjà remplis sans que l'on sache si le contenu est fidèle à la commande . Je ne parle même pas des serveurs dont on devine le menu sur le t-shirt . Au vu de sa prestation, il est vrai que G. Blanc semble avoir oublié les fondamentaux de l’hôtellerie haut de gamme ! Où l'on ne peut s'affranchir d'un maître d’hôtel, d'un chef de rang d'un encadrement et d'une formation solide de son personnel . Être à la hauteur, ce n'est pas simplement rêver aux étoiles ou attendre qu'elles tombent c'est donner au client un service et une assiette à la hauteur de son attente. Pour notre part ... Nous avons commandé en entrée deux pâtés en croute ... Et en plats, pour ma part un cœur d’entrecôte de 250 Grs . Pour mon épouse une volaille de Bresse crème de 110 Grs . Au final la volaille était trop salée et la viande bien loin des 250Grs annoncés En bref et à l’image de la réussite, la garniture pour la volaille se résumait à trois crêpes de 2,5 Cms de diamètre se battant en duel dans l'assiette et pour accompagner ma viande un vulgaire bol de purée tiède brut ou le beurre semble être resté au frigo. Voyageurs passez votre chemin, vous trouverez en cherchant bien, des hôteliers restaurateurs plus respectueux de leur clientèle et aimant leur métier . Des lieux de partage où vos hôtes seront contents de vous recevoir pour vous faire apprécier leur art . Ce qui est triste dans tout ça, c’est que les stagiaires sont formés à la médiocrité et à l'issue de leur expérience chez G.Blanc ils auront du mal à intégrer une grande maison ... de luxe et la tradition
