Trois Fourchettes amid this period of inflation has stayed an experience that surely merits the attention of the local population and, of course, tourists. An honest and correct establishment that curates most of the ingredients that you will find on your plate from their very own garden making this restaurant a true farm to table experience. The style of cuisine can be simply described as what the owners eat around their family table while still refined for their clientele -- a style which pleases me as someone interested in cooking and the gastronomical arts. I must advise as an appetizer, the savory crepe au brocciu which is something I haven't found in France other than Corsica. A true comforting dish that I could frankly eat a dozen of -- simple yet different. You cannot go wrong with any of the main dishes but namely the cannellonis au brocciu are never a miss and showcase the greatness of the famously Corsican cheese (brocciu). As for any side dishes -- the ratatouille may feel like something you can find anywhere but it's one of the best I have tasted. As for dessert -- I will never turn down tiramisu and theirs is perfectly moist while still holding together and having only a subtle taste of alcohol that will please anyone. Y étant allé à 2 reprises, nous avons aussi testé la salle intérieure prolongeant ainsi l'expérience d'un agréable voyage dans le temps. L'accueil est convivial et le service est à la fois charmant et parfait. Le chef n'hésite pas à aller au contact de ses clients rassasiés (plats copieux) pour s'assurer de la satisfaction qu'il procure, proposer sans forcer un digestif de sa création et répondre volontier aux questions sur l'origine des produits de sa carte probablement bio (il est producteur).
