I was part of a large group of people and the chef had asked all of the guests to pre-order the food which is understandable based on the number of guests and busy time of the year.

The issue was that the choices were very limited (2 starters and 2 main course) and he initially did not accept swapping the menus. After negotiating he created a third option with a different price where the starter of one menu could be mixed with the main course of the other.

He called on the day to make sure that all of the guests had no changed their minds as he would not accept any last minute changes.

What he failed to mention was that he did not provide the main course which some of the guests had pre-ordered. No warning either on the night! The waiters had no idea of the initial menu so were not aware that the food they were bringing out was incorrect.

When we tried to discuss this with the chef/owner, he did not accept his mistake, tried to explain that we had no idea how restaurants work which is ironic as I work in the same sector and have been for the past 15 years. His attitude was arrogant, insulting and so typical of a chef who thinks he is better than everyone else.

We have been going to his restaurant for many years and we have generally been happy but on this occasion his attitude was completely wrong and this is not the first time I have been told this by other friends who have been to his restaurant.

My wife and 2 daughters had booked lunch - i happened to be passing the restaurant and decided to join impromptu ; we had been regulars over the years and on this occasion at mid day the restaurant was not busy ; there was a free seat left at my family’s table; I thought I would be able to join in and order a couple salads (both of which costed more than a main) - no this was refused flatly - in fact the waiter said : “it’s been 11 years like this and it’s not going to change today”; I then realised one of our daughter had not ordered a starter with her main - thought I could have that - no again ! Then she herself asked “can I have a salad as a starter pls » and this was accepted !!!! She spent lunch passing me some food across the table…real shame as I had had many nice dinners here in the past and i had hoped that as a good and regular customer he would have accommodated a...

Chez Hugo is truly a hidden gem in the beautiful village of Seillans, one of the “Plus Beaux Villages de France.” The location is perfect, nestled in a picturesque setting that adds to the charm of the experience. The decor is stunning, showcasing a blend of old-world character in a really cool historic building.

From the moment we arrived, the service was exceptional. The young man who greeted us was warm and welcoming, setting the tone for a wonderful lunch. Chef Hugo is incredibly talented and creative, delivering dishes that are both innovative and delicious.

Delicious as always. Started with a Hugo Spritz and then had a couple of bottles of white wine with our food. Started with the chicken liver parfait with an assortment of pickles. Tasty and light. I tried the foie gras my friend was eating and that was delicious. Had the catch of the day as my main which came with a “reduced” soup, almost stew like. So yummy and I ate it all even though I was so full towards the end! I didn’t have pudding but tried my friend’s chocolate fondant style dessert and that was delicious, although the ice cream on top of the hot pudding might no be the best idea and it all melted very quickly.

Very nice view, and super service. She spoke 5 languages which is quite rare in this area and was very kind. The food was good but nothing special IMO. We had the aubergine miso, the cod fish and a vegetarian fleurs de courgettes dish. The first one was good but for me a bit too miso heavy, the Second one was quite nice and the fish very tender, the last one wasn‘t that tasty as the fleurs de courgettes only tasted like deep fried breading. For that and 2 beers we paid 90 euros and for that I would have expected a bit more finesse.

Nous demandons s’il est possible d’avoir un plat de pâtes pour le petit, réponse : nous n’avons pas de pâtes dans notre cuisine, cela évite le gaspillage, alors que le plat du jour était composé de taglioni, la patronne ne l’a même pas proposé. Nous demandons de l’eau gazéifiée, le serveur ramène de l’eau plate. La corbeille de pain était systématiquement enlevée. Par contre l’addition nous a été transmise sans aucune demande de notre part. Un peu d’humilité ramènerai ces gens sur terre avant qu’il ne soit trop tard, car ils oublient que c’est le cochon de client qui paie qui décide, au lieu de nous faire comprendre que cela était presque une faveur de nous recevoir. L’addition était de 230,60€ pour quatre adultes, donc un peu cher pour cette prestation. Merci de votre compréhension, car ce restaurant fait partie du guide Michelin. Bonjour, Nous avons déjeuné Samedi 25/09/2021 chez Hugo à Seillans 83. La cuisine est excellente, par contre l’accueil et le service sont minables, pourquoi ? Nous étions quatre adultes et un petit garçon de 4 ans, pas de menu enfant, donc ne venez surtout pas avec des enfants. Nous demandons s’il est possible d’avoir un plat de pâtes pour le petit, réponse : nous n’avons pas de pâtes dans notre cuisine, cela évite le gaspillage, alors que le plat du jour était composé de taglioni, la patronne ne l’a même pas proposé. Nous demandons de l’eau gazéifiée, le serveur ramène de l’eau plate. La corbeille de pain était systématiquement enlevée. Par contre l’addition nous a été transmise sans aucune demande de notre part.
