Le Fournil du Pont du Gard — Restaurant in Nîmes

The memory of Le Fournil’s delicious bread is still at the forefront of my mind since my vacation in Vers Pont du Gard 16 years ago. I don’t even know the name of my favourite bread. I think it was a fougasse laced with orange blossom water and sprinkled with crunchy sugar, possible fennel seed too. It was lighter than focaccia, airy but not crisp, fragrant, slightly caramelized. I’ve never tasted anything as delicious as this and have been searching for a recipe ever since. I’ll never find anything like it here in Canada.
