From Standout Brunch to Tourist Trap (Photos from 2025 and 2024)
As someone who explores and documents food experiences around the world, itâs hard to put into words how disappointing it is to witness a place lose its essence.
In early 2024, Immersion Sentier was one of the highlights of my stay in Paris. Their pancakes were exceptional â perfectly balanced flavors, clear attention to ingredient quality, and that mascarpone cream with fresh fruit? Pure delight.
Fast forward to 2025, and sadly, itâs a completely different story. Dry pancakes, bland cream, and a dish that felt careless rather than crafted. The space was overcrowded and rushed â a clear symptom of the over-tourism wave thatâs diluting so much of what makes French culinary culture special.
That said, the coffee and latte were still very good â well-prepared and comforting. But a good cup of coffee canât save what used to be a meaningful food experience.
Immersion has gone from an authentic brunch experience to a heavily commodified spot that no longer reflects the quality it once stood for. And thatâs the real shame â when places stop cooking with soul and start serving algorithms instead.

I'm the pancake girl, and let me tell you, these pancakes are top-notch.
I ventured into the pistachio and mango pancake territory with a drizzle of sweet milk sauce. The flavors are impeccably balanced, and the sweetness is just right. It's a refreshingly light dish that doesn't overwhelm the palate, beautifully capturing the essence of the fruits. The pancake batter strikes a perfect sweetness, and the sweet milk adds that extra touch of indulgence.
As for the coffee, I opted for an Americano, and it was a delightful companion to my pancakes.
I dine at the counter, and while the experience was fantastic, a small improvement suggestion would be to have hooks for hanging purses. It's a thoughtful touch, especially in winter when we carry a bit more.

There were two floors with a huge amount of free places but if youâre coming alone then you donât have a law to seat at the normal table,the only thing they will allow you is the bar table. But after I was seated and told for the few times that thereâs no other options, I went to the other floor and saw a single man sitting at the normal table)))) wtf. Also one of the kitchen workers was sitting at the guests area and there was the heaviest smell of sweat.
If youâre not waiting in the line this place is okay, but it definitely not worth the wait if thereâs a big line.
Generally,the waiters were very kind, the interior is great and the food is nice but this system drives me crazy I donât understand such a pointless disrespect, because no matter of the number,it still your guests and if someone came alone at your place it doesnât mean that you should carry this person differently))) Especially if thereâs a tone...

On a rĂ©servĂ© pour 13h un brunch spĂ©cial Saint Valentin, mon compagnon et moi, on nous prĂ©vient en amont par mail quâon ne peut pas avoir plus de 15min de retard sinon on nous facture un supplĂ©ment et on nous indique que le crĂ©neau est rĂ©servĂ© pour 1h30, aprĂšs il faut libĂ©rer la table pour les clients suivants. Dâhabitude, câest impossible de rĂ©server un brunch le week-end chez Immersion donc on se doute quâil va y avoir du monde, on le comprend et on lâaccepte.
Quelle ne fut pas notre surprise de devoir faire la queue 30min dehors avant quâon vienne nous accueillir et de devoir attendre 50 minutes notre commande une fois installĂ©s. De plus, nous avons Ă©galement Ă©tĂ© trĂšs surpris mais surtout extrĂȘmement déçus de devoir partager une mĂȘme table (ou plutĂŽt une banquette pour 6 personnes) avec 2 autres couples sans aucune intimitĂ©, oĂč nous nous faisions du coude Ă coude avec les voisins. On a vraiment senti lâenvie du restaurant de rentabiliser au maximum lâespace afin de faire un maximum de profit⊠Quel dommage !
AprĂšs un premier Ă©tat des lieux dĂ©cevants, on nous a apportĂ© les plats et boissons dans le plus grand des dĂ©sordres. Le plat salĂ© et le plat sucrĂ© sont servis en mĂȘme temps mais sans les couverts, quâon a dĂ» rĂ©clamer. Les boissons sont arrivĂ©s bien plus tard et avec une erreur sur la commande.
Les plats Ă©taient originaux et auraient Ă©tĂ© dĂ©licieux, si on nâavait pas fait brĂ»ler les pancakes et mis de la salade pourries dans lâassiette. Jâai dĂ» renvoyer lâassiette (câest la premiĂšre fois que ça mâarrive) Ă cause surtout de la salade, que lâon mâa remplacĂ© en surface mais qui avait une deuxiĂšme couche cachĂ©e toujours pourries en dessous. Le plat sucrĂ©: un fromage blanc granola maison avec des fruits frais qui aurait pu, lui aussi, ĂȘtre dĂ©licieux si la banane nâĂ©tait pas noire pourrie et la mangue dâun goĂ»t et dâune couleur plus que douteux. Mon compagnon a pris la brioche perdue au chocolat accompagnĂ©e de fruits qui Ă©tait bonne sauf la crĂšme fouettĂ©e qui avait elle aussi un goĂ»t douteux.
Formule brunch de la Saint Valentin Ă 35âŹ, la qualitĂ© des plats et du service nâĂ©taient pas Ă la hauteur! On ne recommande pas lâexpĂ©rience. Les serveurs Ă©taient dĂ©bordĂ©s et ne savaient pas comment absorber le flux alors que des crĂ©neaux Ă©taient pourtant limitĂ©s dans le temps pour les clients. Lâorganisation du service et la fraĂźcheur des produits est Ă revoir.
Nous avons cependant apprĂ©ciĂ© un geste commercial, mĂȘme si câest nous qui avions dĂ» le rĂ©clamer, alors quâau vu de lâexpĂ©rience clients et du service clients, cela aurait dĂ» ĂȘtre proposĂ© spontanĂ©ment Ă notre sens. On nous a offert 2 cookies qui eux Ă©taient dĂ©licieux pour le coup mĂȘme si on a dĂ» attendre 15min pour les avoir, aprĂšs avoir payĂ© lâaddition, le temps quâils en fassent de nouveau car victime de leurs succĂšs.
