In early 2024, Immersion Sentier was one of the highlights of my stay in Paris. Their pancakes were exceptional — perfectly balanced flavors, clear attention to ingredient quality, and that mascarpone cream with fresh fruit? Pure delight. Fast forward to 2025, and sadly, it’s a completely different story. Dry pancakes, bland cream, and a dish that felt careless rather than crafted. The space was overcrowded and rushed — a clear symptom of the over-tourism wave that’s diluting so much of what makes French culinary culture special. That said, the coffee and latte were still very good — well-prepared and comforting. But a good cup of coffee can’t save what used to be a meaningful food experience. Immersion has gone from an authentic brunch experience to a heavily commodified spot that no longer reflects the quality it once stood for. And that’s the real shame — when places stop cooking with soul and start serving algorithms instead. Review 2024 I'm the pancake girl, and let me tell you, these pancakes are top-notch. I ventured into the pistachio and mango pancake territory with a drizzle of sweet milk sauce. The flavors are impeccably balanced, and the sweetness is just right. It's a refreshingly light dish that doesn't overwhelm the palate, beautifully capturing the essence of the fruits. The pancake batter strikes a perfect sweetness, and the sweet milk adds that extra touch of indulgence. As for the coffee, I opted for an Americano, and it was a delightful companion to my pancakes. I dine at the counter, and while the experience was fantastic, a small improvement suggestion would be to have hooks for hanging purses. It's a thoughtful touch, especially in winter when we carry a bit more. Upstairs is bigger and they have different areas for solo diners 🥞☕

The food,the coffee and the sweets are nice,but I really don’t understand the system of discrimination of single guests. There were two floors with a huge amount of free places but if you’re coming alone then you don’t have a law to seat at the normal table,the only thing they will allow you is the bar table. But after I was seated and told for the few times that there’s no other options, I went to the other floor and saw a single man sitting at the normal table)))) wtf. Also one of the kitchen workers was sitting at the guests area and there was the heaviest smell of sweat.

If you’re not waiting in the line this place is okay, but it definitely not worth the wait if there’s a big line.

Generally,the waiters were very kind, the interior is great and the food is nice but this system drives me crazy I don’t understand such a pointless disrespect, because no matter of the number,it still your guests and if someone came alone at your place it doesn’t mean that you should carry this person differently))) Especially if there’s a tone...

Expérience client plus que limite!! Quel dommage !!

On a réservé pour 13h un brunch spécial Saint Valentin, mon compagnon et moi, on nous prévient en amont par mail qu’on ne peut pas avoir plus de 15min de retard sinon on nous facture un supplément et on nous indique que le créneau est réservé pour 1h30, après il faut libérer la table pour les clients suivants. D’habitude, c’est impossible de réserver un brunch le week-end chez Immersion donc on se doute qu’il va y avoir du monde, on le comprend et on l’accepte.

Quelle ne fut pas notre surprise de devoir faire la queue 30min dehors avant qu’on vienne nous accueillir et de devoir attendre 50 minutes notre commande une fois installés. De plus, nous avons également été très surpris mais surtout extrêmement déçus de devoir partager une même table (ou plutôt une banquette pour 6 personnes) avec 2 autres couples sans aucune intimité, où nous nous faisions du coude à coude avec les voisins. On a vraiment senti l’envie du restaurant de rentabiliser au maximum l’espace afin de faire un maximum de profit… Quel dommage !

Après un premier état des lieux décevants, on nous a apporté les plats et boissons dans le plus grand des désordres. Le plat salé et le plat sucré sont servis en même temps mais sans les couverts, qu’on a dû réclamer. Les boissons sont arrivés bien plus tard et avec une erreur sur la commande.

Les plats étaient originaux et auraient été délicieux, si on n’avait pas fait brûler les pancakes et mis de la salade pourries dans l’assiette. J’ai dû renvoyer l’assiette (c’est la première fois que ça m’arrive) à cause surtout de la salade, que l’on m’a remplacé en surface mais qui avait une deuxième couche cachée toujours pourries en dessous. Le plat sucré: un fromage blanc granola maison avec des fruits frais qui aurait pu, lui aussi, être délicieux si la banane n’était pas noire pourrie et la mangue d’un goût et d’une couleur plus que douteux. Mon compagnon a pris la brioche perdue au chocolat accompagnée de fruits qui était bonne sauf la crème fouettée qui avait elle aussi un goût douteux.

Formule brunch de la Saint Valentin à 35€, la qualité des plats et du service n’étaient pas à la hauteur! On ne recommande pas l’expérience. Les serveurs étaient débordés et ne savaient pas comment absorber le flux alors que des créneaux étaient pourtant limités dans le temps pour les clients. L’organisation du service et la fraîcheur des produits est à revoir.

Nous avons cependant apprécié un geste commercial, même si c’est nous qui avions dû le réclamer, alors qu’au vu de l’expérience clients et du service clients, cela aurait dû être proposé spontanément à notre sens. On nous a offert 2 cookies qui eux étaient délicieux pour le coup même si on a dû attendre 15min pour les avoir, après avoir payé l’addition, le temps qu’ils en fassent de nouveau car victime de leurs succès.

En résumé, on a déjà testé un brunch Immersion à République qui était top mais on ne recommande pas du tout celui de Sentier avec réservation pour la...
