Kulcha is made from maida flour, water, a pinch of salt and a leavening agent (yeast or old kulcha dough), mixed together by hand to make a very tight dough. This dough is covered with a wet cloth and left to stand for an hour or so in a warm place. The result is a slight leavening of the dough but not much. The flour is kneaded again by hand and then rolled out using a rolling pin into a flat, round shape. It is baked in an earthen clay oven ("tandoor") until done. When baked, it is often brushed with butter or ghee, although this is not necessary. It is then eaten with any Indian curry. In particular, a spicy chickpea curry known as chole is the dish of choice for being eaten with kulcha.[In the first variant, instead of using water to knead the dough, milk or yogurt can be used; this results in the dough becoming softer and more rubbery. This type of kulcha is known as doodhia kulcha (milk kulcha). Leavening is often greater if yogurt is used.This variant of kulchas are not stuffed but made plain and eaten with a curry which can be either vegetarian or meat-based. We saw Amritsari Kulchaa Corner and at first view everybody decided to take a rest and eat Punjabi food and Taste Lassi. So we all ordered a mix of Kulchas like Aloo Pyaz, mix Kulchaa, Paneer Kulchaa which is being served with Chole, Raita and salad with khatti meethi imli chutney. Chole looks like it was made of homemade masalas and with less gravy. Raita is so cool with the freshness of curd and boondi giving the actual taste in the plate. Last but not the least the Onion salad with khatta meetha saucy juice is actually the rising star on the plate. Finally the Kulcha is being brought on to our table served with crunchiness and softness inside with a stuffed mixture of aloo,pyaz,cheese and masalas. Read moreI recently visited this street-side food joint that specializes in Amritsari Kulchas, and it was a delightful experience!
The staff was incredibly courteous and well-trained. The place was neat and clean. The Amritsari Kulchas were close to authentic. The full range of the food menu was impressive, offering a diverse selection of delicious food items.
What made the experience even better was the reasonable pricing, giving us excellent value for our money.
However, there were a couple of minor drawbacks. The location being on the corner of a busy road made parking a bit of a challenge. Additionally, while the staff served our initial order efficiently in the car, they didn't return for any additional items we required.
Another minor observation was that the serving portion of Chole and chutney remained the same, regardless of whether we ordered a single or two pieces of Kulchas. Nevertheless, these issues didn't overshadow the overall good experience we had at this food joint.
