Mathew's Cafe's Onion Uttapam had the ideal harmony of tastes and textures. The uttapam's inherent softness and fluff caught my attention right away. It had the ideal amount of crispiness around the edges and was cooked to perfection. The slightly tart flavor of the batter went really well with the savory undertones of the onions.
Speaking of onions, they added a delicious crunch and a burst of flavor to the uttapam when they were liberally and evenly sprinkled throughout.
