One standout feature of Desi Chulha, as their name suggests, is the "Chulha of the Day." Every day, they cook one vegetarian and one non-vegetarian dish on a traditional chulha (clay oven). This cooking method imparts a smoky, earthy flavour to the dishes, and their base gravies are also prepared over a coal fire, which really enhances the overall taste and gives it that authentic, traditional touch. It’s a rare find in a city that’s flooded with modern-day eateries, and it makes Desi Chulha an even more exciting place to explore.
We kicked things off with their Chicken Akbari starter, which quickly became one of my favourites. The tandoori chicken was perfectly marinated—juicy, tender, and creamy with a delicious smoky flavour that only comes from being cooked on a coal fire. It was a real treat for the taste buds, and the portion size was generous too.
For the main course, I opted for their Chulha of the Day, a must-try that changes daily. The combination of flavours was impeccable, with the meat cooked to perfection and the gravy rich with spices. The best part, however, was the tandoori roti. Unlike most places where the roti is made from refined flour, Desi Chulha serves theirs with 100% wheat flour. The result is a roti that's hearty, flavorful, and a perfect accompaniment to the dishes.
Mughlai cuisine has been perfected over centuries, and it’s safe to say that Desi Chulha has captured the soul of Delhi’s food scene right here in Kondhwa.
