Se'i or sei is an Indonesian smoked meat from Kupang, Timor island, East Nusa Tenggara, Indonesia. Se'i may be derived from a variety of meats, with pork (se'i babi), beef (se'i sapi) or orther animals such as venison (se'i deer) as common offerings.
Today, the most popular se'i meat is pork. You say smoked meat, not sure. Because it's the way to cook it smoked, but it's different from smoked meat in general. The main difference lies in the leaves that wrap or cover the flesh when smoked and the wood that is burned. Of course it is also different in terms of the spices used to season meat before smoking. Literaly, each restaurant has its own recipe.
The term “se'i” itself comes from the “Rote” language which means meat which is cut into lengths. On Rote Island, which is located near Kupang, deer meat was originally used. But because deer are protected, they are substituted for beef or pork.
Well as the name implies, the meat is cut lengthwise, then seasoned. Then the meat is placed on the parcels and covered with kosambi leaves, while under it the kosambi wood is burned to produce hot air and smoke that makes the meat cooked.
It takes a long time to make the meat cooked and ready to eat, up to 9 hours. It is understandable, because the meat is not burned, it is not exposed to fire, only smoked. And the leaves and wood of this kosambi are what make it smell unique, different from smoked meat in general. There are also certain restaurants that use special and secret leaves or other wood.

If you're not concerned about halal whatsoever, you will be plenty happy with the variety of foods and beverages. They also sell some local snacks. Many peoples visiting this place would order take away for Se'i. The Se'i can just be eaten as it is, or you can cut it to small pieces and enjoy it with a glass of wine or beers. You can also cooked it with variety of menu, such as nasi goreng. If you want to take out the Se'i aboard airplane, make sure to put it inside cardboard and wrapped it to avoid leakage of it's sambal. BTW you can ask for free cardboard if you order...
