Dispensa Franciacorta — Restaurant in Adro

The restaurant is top notch. I will definitely come again. We had the Christmas set menu. The starter was a wide array of amazing hand made food - including beautifully made fish and 24 month aged meat cuts. For a starter we then had Russian salad with caviar and fish from the nearby lake. For the first we had ravioli with meat and a bit of parmesan. The meat course was rooster with some potatoes, polenta and deconstructed stuffing. The desserts really stood out. Gelato was simply incredible - with a mix of citrus and a hint of ginger it melted in your mouth and was a perfectly light balance after the heavier chicken. This was followed by a home made panettone and zabaione with a hint of what I suspect was mango. The course finished off with a generous portion of home made baked sweets. All around incredible. The wine pairings were also phenomenal and the sommelier was so nice and friendly. She gave us little extra pours of wine here and there which turned out three glasses of wine easily into five! The service staff were also incredibly attentive - plates were taken away as soon as they were finished and silverware dutifully changed at every course. Amazing Christmas lunch - we will be back. I went to Dispensa Franciacorta for a date and the food really exceeded expectations. It's been a few months so I do not remember exactly the names of the plates, but from the pictures I remember ordering an onion dish as a starter that swept me off my feet! I'm an onion lover but this dish really made me fall in love with the vegetable. I wish I could make it exactly like they did. also, where did you find an onion that big?! The meat was really good, I think I got deer, but I cannot remember. The dessert was chocolate and nuts maybe? I remember I liked it more than my date! I love chocolate! We also let the sommelier recommend a bottle of red which we did not finish but of course took home because it was so delicious and coupled so well with the food. Shoutout to the sommelier for the exquisite recommendation.

Siamo stati a cena qualche giorno fa nel ristorante (il locale ha anche al suo interno un'osteria e un wine bar).

Il ristorante offre un ambiente tranquillo e separato rispetto al resto del locale, la cura dei dettagli si nota anche nella sala che mi è piaciuta molto.

Prima di venire in questo locale ho letto un po' di informazioni a riguardo (lo faccio con tutti i locali di un certo livello), ma non pensavo mi sarei sorpreso della quantità di sapori che avrei incontrato.

Ho preso Risotto | Tinca | Limone | Capperi, ottimo il risotto, come anche la tinca, una vera e propria sorpresa il limone! Credo sia la prima volta che mi capita di scoprire un sapore così particolare, che alternava ciclicamente tra il limone e l'aceto, creando un abbinamento perfetto con il resto del piatto.

Successivamente ho preso Manzo | Spinaci | "Bernese", assaggiando singolarmente gli ingredienti sono rimasto sorpreso dalla dolcezza degli spinaci (cosa non positiva per quanto mi riguarda) ma una volta composto un boccone con tutti e tre gli ingredienti sono rimasto sorpreso da come si bilanciassero perfettamente i diversi sapori!

Infine, ho preso Albicocca | Caramello, una sorta di crème brûlée a base di albicocca, in questo caso mi sono reso conto di non aver fatto una buona scelta per i miei gusti perché il sapore dell'albicocca era troppo dolce per riuscire a terminare il dessert (palla al balzo subito presa dal mio commensale).

Complessivamente credo sia uno dei migliori posti in cui ho avuto il piacere di mangiare, non tanto per la qualità degli ingredienti (comunque ottima) ma per la capacità di lavorare le materie prime creando sapori complessi.

La cosa che mi è piaciuta di più è che la grande tecnica riposta nei piatti sia stata utilizzata per creare grandi piatti e non, come spesso purtroppo accade, solo per mostrare di possedere la tecnica.
