We have been dining at Rossi’s for years. Our love-hate relationship is borne from the unpredictable service you receive from the two-owner brothers who have been running the establishment for years. Surly and rather disengaging. Not characteristics commensurate with front of house behavior. In spite of themselves, the Tratoria has prospered and grown over the years and I attribute this to the quality of the food. Typical Umbrian, simple and therefore always delicious. At first everything was fine, nice place, normal service, there is a fish menu for those who do not eat meat. Large selection of wines. Su suggerimento di persone locali, che hanno un bar nei pressi della parte alta delle cascate delle Marmore, abbiamo deciso di provare. Volevo mangiare i gamberi di fiume. Facile trovarlo a circa 2 km dai parcheggi delle cascate nella parte bassa lungo la S.S. che conduce a Cascia. Due grandi aree di parcheggio, all' esterno forse un poco anonimo, ma entrando subito si cambia opinione. Locali ampi e puliti. Subito accolti da un cameriere educato e molto cortese che ci fa scegliere il tavolo. Immediatamente arrivano due menù è il cestino con il pane. Da bere ordiniamo acqua minerale che viene portata al tavolo sigillata. Ottimo. Oltre le pietanze in menù ci sono altre specialità che vengono enunciate con grande professionalità e competenza. Ordiniamo due antipasti: Gamberi di fiume in salsa verde......un viaggio in sapori perduti, olio di oliva eccellente, gamberi freschi e delicati. Nota 10 con lode. Cestino caldo di Pan di sfoglia con ripieno di trota salmonata e gamberi accompagnati da misto di verdure..... Una delizia di una delicatezza unica. Primi Ceriole (:pasta fresca fatta a mano tipica) con gamberi e pomodorini. Porzioni abbondanti, di una leggerezza e bontà che risulta difficoltoso trovare gli aggettivi adatti per esprimere un giudizio superlativo. Conclusione : una semplice ma freschissima e molto ben grigliata trota intera. Carne bianca ben insaporita, una ulteriore delizia e conferma che siamo realmente entrati nel ristorante giusto.
