EXPRIMO — Restaurant in Belluno

Our experience was incredible. We tried to find a local restaurant to enjoy and were turned away a lot for closed locations on a quiet Monday evening. We came across this place first originally and decided to go for it as our last hope. We were invited in warmly by the host who also happened to be the server. There are four tables in this intimate ristorante. They offer a tasting menu which we became excited about trying as we both love good and interesting food. The host/server was excellent as he had detailed ingredient knowledge of every dish, every paired wine (we asked for his suggestions) in both English and Italian! We were introduced to the (surprisingly young!) chef after the meal and thanked them both. They turned a frustrated evening into one of our best experiences. I'll not forget my first time at "Primo", wow what an amazing food experience. For once i didn't choose what to eat but I choose menu degustazione "Caleidoscopio". I let the Chef choose for me. I don't even remember how many dishes we had because every dish was an explosion of flavors. I was fully amazed by the seasonal food choice with the high quality of wines. Mosso da una grande curiosità per la nuova apertura sono stato a cena in questo bijoux in quel di Belluno. Il locale è intimo e sobrio, fuori dal caos del centro ma facilmente raggiungibile. I pochi coperti consentono al Maitre di dedicare particolari attenzioni a tutti i clienti, raccontando il locale e la sua mission; il servizio infatti risulta essere preciso, presente e molto professionale. Molto interessante e variegata è la carta vini che, con circa 100 etichette, spazia dai produttori del territorio sino ad arrivare all'estero. Per quanto riguarda la cucina si capisce subito che lo chef, seppur ragazzo giovane, ha idee ben chiare e un'ottima esperienza alle spalle. I piatti infatti vanno a ricercare la stagionalità dell'ingrediente, facendolo percepire nel pieno del suo gusto e le lavorazioni rispettano molto la materia prima, senza però rinunciare all'estro e qualche azzardo ben riuscito. Piatti molto ben bilanciati con possibilità di mangiare alla carta oppure di scegliere il Menu degustazione 'Caleidoscopio'.
