Definitely recommend a reservation before going. We arrived at 1845, and there were reservation signs everywhere from 1915 onward. The service was amazing, fast, and was very impressed most of the staff seemed to speak some English, if not fluent. Diavola pizza was really good. L’ambiente è sicuramente curato e pulito, e il personale si è dimostrato molto gentile e attento, qualità che apprezzo molto. Tuttavia, il vero punto dolente — motivo per cui ho assegnato solo 2 stelle — è purtroppo la pizza.
L’impasto risulta estremamente rigido e pesante, simile a una "suola di scarpe", probabilmente a causa di una bassissima idratazione e dell’uso di farine troppo raffinate e ricche di glutine. Un vero peccato, perché i condimenti utilizzati sono di discreta qualità, ma vengono penalizzati da una base così poco riuscita.
Il mio consiglio, sincero e costruttivo, è di rivedere quanto prima la ricetta dell’impasto. Avete tutte le carte in regola per offrire un’ottima esperienza, soprattutto essendo l’unica pizzeria della zona.
