We spent a lovely and yummy Tuesday night at this place. We had the sea urchin pasta, seabass, octopus and a wild variety of desserts.
The dishes were a perfect composition of flavours and textures. Simple but extremely tasteful. E.g. the sea urchin pasta: Pasta on the point al dente (okay we are in Italy, anything else would have been a crime) but the sea urchin gave just the right twist of "fishiness" and salt to the super creamy sauce. The onion juice with the seabass was probably the best essence one had ever created out of onions. And the robo jellies were just fun.
Wine: excellent. Staff: perfect. Friendly. Interested. Provided a lot of information. Gave a perfect impression of Italian hospitality.

Pentole e provette is a nice spot in an old but well restructured warehouse close to the center of Fasano, offering an interesting contemporary menu, meant to reinterpretate traditional receipes from southern and nortern Italy. The cook knows well what he does and the service is very efficient, dough a lil cold.
