We stayed at Aethos and were able to have a couple dinners at the restaurant - which were fantastic. Located in a light-filled tavernous nook, the rest is small and quaint but with plenty of warm/friendly service. The Chef, Delphine, creates amazing food - every single item we ordered was delicious. From pastas to veal to dessert to even salad/grilled vegetables - so delicious and fresh. The cacio e pepe is some of the best I ever had. Chef Delphine also makes incredible olive oil.
