I was not a fan of the spleen sandwich, personally. It was done well, I just don’t think spleen is an organ I’d seek out again. (It was a texture thing I think - like eating flabby, watered down liver. I like liver, tripe, and other organ meats generally, but this wasn’t my taste.).
