If there's one place in Castelfalfi that you need to visit, it is without a doubt, Il Rosmarino. I am not exaggerating when I say that this gastronomic paradise is so much more than a restaurant – it’s a place where dreams are cooked into reality, and Head Chef Matteo is the maestro leading this orchestra of flavors.
Matteo’s dedication to providing superb customer service is simply unparalleled. Not only did he conduct the culinary ensemble with a prowess that is pure artistry, he also took the time to personally interact with us, ensuring that our experience was nothing short of phenomenal. The true genius of Matteo lies not just in his ability to expertly create and serve, but in the human warmth he brings to the table. A pay rise is not just deserved, it’s imperative for the talent and dedication he possesses.
The menu offered at Il Rosmarino is like a love letter to Italian cuisine. The pan-fried stuffed gnocchi was a revelation. Each bite melted in the mouth, releasing an eruption of flavors that would make even the sternest critic smile. The rib-eye was cooked to sheer perfection and sliced with the precision of a master craftsman, each mouthful a testament to the chef's superior skill.
A special mention is due for the Pappa al pomodoro. This humble Tuscan dish, in the hands of Chef Matteo, became a true symphony of flavors, each spoonful harmoniously blending into the next. The combination of ripe tomatoes, fresh garlic, and aromatic basil left us scraping the bowls, utterly lost in the gastronomic reverie.
A shout out to Andre, the pizza chef, is definitely in order. The Diavola pizza is no less than a crunchy revelation, with the spicy salami perfectly balanced against the robust and full-bodied tomato sauce. The dough is superb - light yet flavorful, crisp yet satisfyingly chewy. Each slice was a perfect balance of taste and texture, raising the humble pizza to heights hitherto unimagined.
Finally, let's not forget Aldo, one of the waiters at Il Rosmarino. Aldo’s attentive service, constant check-ins, and genuine care elevated our dining experience to new heights. His knack for anticipating our needs and his readiness to assist us made our evening unforgettable. Thank you, Aldo, for making our experience at Il Rosmarino a great night of dining.
All in all, Il Rosmarino is not just a place for dining. It's an experience - a journey of taste, art, and passion. From the kitchen to the table, it's a symphony conducted by the maestros of taste, and trust me, you'll want a front-row seat for this...
Read moreWe have been more than 3 times at Rosmarino restaurant while we spent some time at Castelfalfi hotel and we must say we were every time happy to return, not only because of the great food but as well because of the warm and professional service. We had the pleasure to meet Maurizio, Mike and a lovely lady (we forgot her name) and the chef of cuisine, Davide, they all made from our visits a nice experience. Maurizio gave allways his best to find the perfect wine pairing for our dishes and the rest of the team had best recommendations. The cuisine of Davide is an experience that is a must to try, very innovative but always with a connection to his Italian roots. The other restaurants of Castelfalfi where he is chef too, are very recommendable too, especially La Rocca. PS: … and a very dog friendly restaurant too… they were all very lovely to...
Read moreBeautiful restaurant with great service and delicious food. We stopped by looking for a place to have dinner and they happily and easily accommodated us (4 adults and a child) without a reservation. My nephew thoroughly enjoyed his "bunny" pizza and we adults all found our dishes very good. The staff were attentive and even helped celebrate 2 birthdays in our party by bringing candles with deserts.
I would definitely recommend. I live in Florence so I hope to visit here again soon when I can with friends, and my family who returned to England today said they would love to...
