A HIDDEN GEM AND MUST-VISIT RESTO FOR ITALIAN CUISINE!!
I was brought by my native Romano friend to this neatly tucked Bocchea neighborhood restaurant as he wanted me to taste Chef Francesco’s take on mostly Roman cuisine (the daily Menu may change depending on what are fresh in the market but Roman food are constant). I asked Pietro, my friend, to order for me & he got me their Carbonara…
I swear, it IS the best carbonara (and one of the best pastas) I have ever had!! The creamy sauce (not oily or soggily sticky), made from real eggs & an abundance of pecorino was liberally topped with delicious guanciale and just the right amount of ground pepper corn! The mix was so savoury it just opened up my taste buds and sent heavenly signals up my brain. You really need to have it to know how exquisite it tasted. Since we halved the order with my friend, each forked serving of the perfectly cooked pasta immersed in the heavenly sauce was taken with immense delight and gusto! 🌥️. Our very lively and simpatico waiter also perfectly paired it for us with a great Italian white wine that harmoniously allowed the tastes of both wine and pasta to come forth even better!
While the saltimbocca (serving good for two!) that followed was really great—very, very tender meat with a rich, rightly salted and spiced taste, and an equally delicious sauce topping it, the pheromone-alert signalling an excess in delight that was triggered by the carbonara was still lingering and unfortunately overwhelmed my satisfaction over that of the delicious saltimbocca. So, if ever you come to eat, don’t do the full Italian course as each order is a full meal for me…or, take time for each course (halve with someone so there’s room for the dolce—their tiramisu is delightfully pleasing) to allow your brain to settle from the gastronomic delight it receives from each delicious treat! It’s a pity I got so smitten and excited with only the first smell of the roasted guanciale, I forgot to take pictures!

This place seats a few patrons only at any one time so it would help to reserve ahead. Tonight was full of locals & some foreigners (like me) brought in by their local friends. One could not go wrong in this one when craving for an excellent Italian...
Read moreThis is an absolutely fantastic restaurant operated by a stellar staff. They are considerate, attentive, bilingual, timely, and friendly.
There is a fair amount of seating available inside, which is quite comfortable. The food is beyond excellent, and the staff is wonderful about providing personalized recommendations. The bread basket given prior to the meal is tasty and can come with spices if requested. There are numerous beverage options as well.
I personally ordered the Saffron Pasta and a red beer, which proved to be one of my most genuine and marvelous dining experiences while in Rome. Everything was reasonably priced and well worth it. I fully expect to visit again next time I'm in the area.
Additionally, reaching Pasta al Volo is quite easy. The road can be walked along easily enough, and there is a fair amount of available parking in the neighborhood. Most of the seating I saw was indoors, but the spacing and ambience within are both well-thought-out and pleasant. The restaurant is easy to find, and the Goolge Maps marker is quite accurate. The restaurant within is well-insulated against outside sound, so I never heard any passing traffic while eating.
Overall, I highly recommend this as one of the best Italian cuisine dining...
