Le Verdure, owned by Hakuba Farms, is a farm-to-table gem nestled in the stunning Northern Alps landscape. This Italian restaurant perfectly embodies the spirit of Hakuba's White Horse Village.
Our dinner was exceptional, featuring a salumi showcase with standout guanciale and fennel salami from 上州空風ハム (Jōshū Karakaze Ham). The corn soup, made with local Hakuba farm corn, was delightful. Homemade pasta dishes like Amatriciana and Arrabbiata with nduja were perfectly executed.
The service was excellent throughout our meal. While the staff's English was better than my Japanese, we managed to communicate well, adding to the warm and welcoming atmosphere.
The restaurant's deep connection to Hakuba Farms elevates the dining experience. The farm's commitment to environmentally friendly and organic practices is evident in every dish. The small but well-curated wine list complemented the meal beautifully.
Highly recommended for those seeking authentic Italian cuisine with a local Japanese twist, and a true taste of Hakuba's...
Read moreThe food was unbelievably good. Chef Naoki Morimoto lived in Piemonte for a year and a half and brought with him a culinary wisdom that surpasses anything I have tasted so far in Japan (regarding Italian restaurants). Mixing typical Piemontese dishes with fresh ingredients from the Nagano region, he creates dishes that are very difficult to find elsewhere. It is a culinary experience that no food lover should miss! The dishes are without exception made with fresh ingredients, the pastas are homemade fresh and certainly with a lot of love and passion! Also the wines are of high quality with a mastery of the Piemonte region. Considering also the fine attention of the waitress and the explanations of the menu and wines presented by the Chef himself, the experience in this restaurant was exceptional. This restaurant is more than recommendable and if it were up to me, I would give it a Michelin star! The value for money is excellent. The only disadvantage for me is that it is far away from Tokyo! Chef Naoki, you...

The 7 courses were all amazing but the standout was the hand made gnocchi in this beautiful cheese sauce. It was melting in your mouth. The pasta was beautiful as was the meat and the salad with all locally produced vegetable. Highly recommend coming here. The chef is an incredible human and greets his guests at the door as well as seeing you out. Exceptional service, with kindness, passion for food and locally grown produce. Well done for creating a beautiful restaurant with love for food and...
