When we enter this small store in Karuizawa, it felt like we were quickly transported into a cosy place where a theatrical performance may begin.
Indeed, we were lucky to be sitting on the counter to witness Tsuchiya-san’s unyielding love for his craft. The omakase course takes you on a journey through different parts of a chicken and its frontiers. While grilling and preparing the dishes, the chef seems to be fully immersed in his performance, basting the chicken with sauce or slicing the meat which he ascertained to be the perfect texture and temperature. To see a chef applying that level of detail towards his food is inspiring. The other waiters swiftly served us and they carefully plated each dish. We devoured artworks over artworks. A kind lady was also giving us recommendations about Karuizawa. It was a cordial service.
Some of the highlights of the night were: chicken wings that were so juicy and it had the joyous feeling of eating piping hot takoyaki as he asked us to eat it in one bite. Torisoboro that tasted simple and clean but paired with fresh and tart pickles and a perfectly grilled quail eggs whose explosion gushed forth a runny interior. Tasty chicken pate elevated to lone heights with grilled camembert. Boiled white rice with extremely high quality raw eggs that tasted creamy and dreamy. Chicken liver grilled to perfection, which converted some of us who don’t even eat liver. Yakionigiri chazuke, which was a comforting classic elevated with the toasted rice balls. The chicken soup drenching everything had the feeling of a long hug.
I was left with a certain mix of envy and awe - we should all strive to love whatever we do as much as Tsuchiya-san loves grilling...
Read more先日ご馳走になってきました。 お店は軽井沢に有り、母とご友人がお気に入りのお店です。私もご馳走になってきました。私の大好きな鶏肉を堪能です!それほど大きく無いお店はカウンターの他テーブル席が一つ、ご主人様は優しくとても丁寧な方、お店の方々は気持ちよく、心地よいお店です。
他の予約のお客様も揃ってから、お料理が始まります。予約時間5分前からぴったり位に伺うのが良いかな。主人様がカウンターの目の前で鳥を焼いて提供してくれますよ。備長炭を使い焼き加減がまた絶妙です!皮はパリパリ香ばしく、軍鶏の弾力と旨味でふっくらジューシーに、、一度で2度美味しい!!鶏肉好きには天国ですね。換気扇も確りしていて煙や匂いの心配は入りませんね。
部位をそれぞれ美味しく提供してくれます。基本塩味かな、繊細な旨味を損なわず、巧く引き上げてくれる絶妙な焼き加減と味付けです。酢橘のアクセントがこれまたストライク。レバーはとろっととろける美味しさにびっくり。画像は先付けと手羽先を撮り忘れちゃいました。最後の焼きおにぎりのお茶漬けも絶品!

お店の外壁におそばと書いた看板があり、あれお店間違っちゃったかなと先を探しましたが、そこで合ってました。おそばの看板が妙に目立つお店でした。建物続きで隣はおそば屋さんです。
