The other day, I visited a popular ramen shop in my neighborhood. The place had a cozy atmosphere, filled with what seemed to be many regular customers. On that particular day, the menu was limited to a special ramen made with dried sardine (iriko) broth, so I decided to give it a try. As soon as the bowl arrived, the aroma of the broth was inviting, and with the first sip, the rich umami flavor spread throughout my mouth.
