My friend and I regard this bakery as our greatest and most precious discovery on what is one of the most incredible trips we have had. The bread is baked, from spring through to Christmas, in a wood-fired clay oven, which was built by the baker himself. In winter or when they have a lot of orders, they also use an electronic oven indoors. They use only natural yeasts and their flour comes from Nagano and Hokkaido Prefecture. Most of their bread has an incredibly chewy bite, otherwise otherworldly soft and fluffy, and the dough itself is unbelievably tasty. We've tried almost every kind they make and loved them all. The owner is a very kind and chatty guy and we got to make friends with him. He brought us behind the bakery to show us his father's woodworking studio, which itself was stunningly beautiful and we got to see some of the pieces that were recently finished. Read moreWe found this bakery by accident when we were camping nearby with friends, and what luck! We bought breakfast pastries that were all very good, we tried the cinnamon walnut bread, almond filled pastry puff, and flavoured bagels. The only downside for me was that the croissants are only ready by 11am and that's too late to have breakfast.
In fact we enjoyed the pastries so much that we went back to get pizzas for lunch 😀 and they were also wildly delicious! thin crunchy crust with a soft doughy inside. We ordered the margarita, mushroom, peperoni and a local original: cheese and honey 🍯
I would recommend getting your items to go as I believe that's how the setup is intended. While we were waiting a lot of customers would pop in and get their orders for take away.
The owners were very kind and patient with me and my limited Japanese.

There's also all kinds of baked goods for sale. Owner is super friendly and nice. Pizza itself is treally tasty and it feels like every pizza is made with love. Totally worth of it! One minus side is that seating outside is a bit coolish when it's cold weather. There's no specific toilet for customers but the owner let me use toilet...
