The ramen tasted good. I like the tasted of the soup! I am definitely going back for ramen. The menu was all in Japanese but they had some pictures (that’s how my husband picked his ramen and he was happy with it) we even had Black pig gyoza which was also good too! This place is small only like 10~15 people can fit at once ( from what I seen) So you might have to wait but it was worth it! For parking you would have to park in the Haiki station coin parking lot.

Literally a Ramen research centre. The master chef here is a Ramen Pro, and guaranteed that you can't taste the Ramens here anywhere else in the world. I often drive 2 hours after work just to have this ramen as dinner and return. It is worth it. The new recipes that he "discovers" are worth the trip. Follow him on Instagram for the latest recipes.

2024.6.12 “研究助手になりたい、、” 佐世保市早岐 〜らーめんとライス〜 今日はどこに行こうか全く決まらない、、 考える所全てしっくりこない、、 新規開拓の店に行きたいけどまとまらないので久々に熊本の名実ともにエンペラー的な菊池のラーメン店にしようかと考えてた矢先、、 インスタでいつも広範囲で魅力的なラーメン店の投稿をされてあるノーラーメンさん（略してすいません、、）の投稿がずっと気になりながらも何となく遠いイメージがあって重い腰と腹が上がらず行けずにいたあのお店！！ そっと背中を押していただいた気分になりやっと行って来ましたww “ラーメン砦 研究所”さん！！ 駐車場はないようなので少し離れた早岐駅のコインPに車を止め徒歩でお店へ！！ 入店するとテーブル席は埋まっており幸いにもカウンターの左から2.3番目が空いていたのでそこに着席 行く前から決めてたメニューがありながらも気になるメニューがあり過ぎて一瞬、考えが揺らぎながらも頼んだ物は、、 “どろニボらーめん 煮たまご入り+ダンクライスと冷製！トリュフ醤油の卵かけ麺 煮たまご入り+ダンクライス” 待っているとテーブル席が一つ空きお店の方よりテーブル席へどうぞと言っていただいたのでお言葉に甘えてテーブル席に移動 そこから待つことしばし、到着！！ 見た目からすでに旨そう、、 さっそくいただきます！！ まずはスープを一口、、 うっわっっ、、旨っっ！！ り庵さんでもそうでしたが煮干らーめんの経験値が限りなくLV1に近いためもっと煮干の味がくるのかと思いきや他の旨みも効いていてこれは麺を啜る箸が止まらん、、 たくさんの具材もいろんなアクセントになり楽しく旨い！！ しかも、使っている麺は福岡でお馴染みのあの博多製麺所さんと作り上げた麺との事(某文献の特集記事を拝見しましたw)で間違いない！！ そして、愛方から少しもらって食べた卵かけ麺がこれまたたまらなく全部食べてしまいたい位旨かった、、 考えただけでも両方共に今すぐまた食べたい、、 麺完食後は待ちに待ったダンクライスをアリウープでドンブリへ！！ これまた両方旨いに決まっていて気付けばあっという間に完食完飲！！ 気になるメニューがたくさんあるのでまた１つ嬉しい悩みのタネが増えてしまった、、と思いつつ店を後に ごちそうさまでした🙏

If you ever get to Huis Ten Bosch area, around the area of the Haiki station, Toride Ramen will definitely fill that ramen void. Easy to find via Google Maps, and if ever they're full, it's not a long waiting time. The food, it's one of the best ramens we've ever tasted in Japan.
